One of our favorite recipes we have written on our blog was our taco skillet. Dan’s brother was visiting and I wanted to make a fast and fun dinner for them in no time. I rushed to the grocery store and grabbed ingredients as if I knew what I wanted to make. Grabbing chips, black beans and salsa, I created a cart full of easy and inexpensive items that had Mexican flavors. As I took them home, I added them thoughtlessly to a skillet and melted cheese on top. At that moment, our amazing taco skillet was born. We were completely surprised by the outcome and loved how delicious, simple and satisfying the dish really was. Wanting to have that incredible dish again, I put a cold-weather twist on the meal and created the winter taco skillet.

With pomegranate seeds, green enchilada sauce, chicken and rice, this skillet was just as delicious as the first and was completely perfect for the season. It was both zesty and sweet and packed a powerful crunch! We piled our plate full of chips and placed the skillet ingredients on top, creating a nacho-like treat. We absolutely loved this amazing combination and the tasty balance it brought. Each bite was so fun and reminded us of that previous, delicious taco skillet. Best of all, it was still a low-budget meal that took almost no time to create.

Since it is such a busy time for us with work and the holidays, meals like this are exactly what we need. I have been getting home so much later due to errands and tasks for work, that a quick meal is essential. These fast fixes are what I have been searching for to keep us full and happy. As a bonus, this skillet is a beauty to prepare for others. The festive colors would be perfect for a laid-back holiday party or for a potluck. I can imagine guests being wowed by the vibrancy of the dish and also of course by the incredible flavor that it packs. This winter taco skillet can also have the addition of so many ingredients including pineapple, tomatoes and even guacamole. We love the versatility as well as the complete ease that it brings. If you prepare this skillet for friends and family, I guarantee that it will be a delicious and exciting crowd pleaser!

Ingredients

  • 1 cup Green Enchilada Sauce
  • 1 cup Chicken (we used Rotisserie Chicken)
  • 1/2 cup Black Beans
  • 1/2 cup Rice, cooked
  • 1/2 cup Tortilla Chips, Crushed
  • 1/4 cup Corn Kernels
  • 1/4 cup Pomegranate Seeds
  • 1/4 cup Avocado, Sliced
  • 1/4 cup Lettuce, shredded
  • 1/2 cup Monterey Jack Cheese
  • 1/4 cup Feta Cheese

Instructions

  1. In a large skillet, heat the chicken and enchilada sauce on medium-low heat. Add beans and rice and stir on and off for about three minutes.
  2. Reduce heat to low. Pour in tortilla chips, corn, pomegranate Seeds, avocado and lettuce. Melt cheese on top of skillet. Serve immediately. Enjoy!
