Pasta is a staple in this house. If I had it my way I would convince Allie to have it more often. Sometimes the easiest thing to prepare for dinner after a long day of work is pasta. All you have to do is boil water, cook the pasta for the instructed time and serve with your favorite sauce. Being part of a large Italian family, pasta was enjoyed several nights a week growing up. To me, having pasta for dinner reminds me of the many great memories I have of my family at the table. There is nothing more satisfying on pasta than a freshly made sauce. Fortunately for us, this tortellini with lemon sauce recipe highlights our delicious, homemade Lemon Sauce.




Tortellini with Lemon Sauce

Two years ago Allie’s parents bought me a lemon, avocado and olive tree. Although I am still waiting for the avocado and olive trees to produce, the lemon tree has produced many lemons. It was extremely exciting knowing that the highlight of this dish was grown in our backyard. There was something nostalgic about picking and searching for the best lemons on our tree for this sauce. This is as close as we can come to our own version of farm-to-fork.

Moments like these are what make living in Sacramento special. Over the last decade the city has made numerous strides as pioneering the farm-to-fork movement. Pending on who you talk to, it really is considered the Farm to Fork Capitol of the world. Many of our local restaurants are implementing these practices and it is such a joy eating there knowing their food is grown within 15 miles. That being said, The International Food Bloggers Conference (IFBC) will be taking place for the second straight year in our city. This conference is important to us because it allows us to meet fellow food bloggers. It provides the opportunity to interact with the individuals that write for many of the blogs we have come to know.




Best of all, this conference showcases local businesses that utilize the farm-to-fork concept. Throughout the day there are panels that explain how the city has embraced the idea. Tortellini with Lemon Sauce




Allie is a sauce girl. The more sauce, the better. I usually laugh when I see her sandwich loaded with not just extra, but extra mustard. Pasta sauce is no exception. Although she is not a fan of sweets, she enjoys sour flavors like lemon or lime on her food. The best thing about this tortellini with lemon sauce is that you control the amount of lemon that goes into it. I love flavor, but I am not a sauce fanatic like my wife. We say ¼ cup of fresh lemon juice, but we invite you to experiment! For extra brownie points, impress your guests or special someone by squeezing some fresh lemon juice after the pasta has been plated.

This tortellini with lemon sauce is a favorite of ours because it is quick and delicious. We are all about making meals that help make daily life easier to navigate. This is one of those recipes! If you make more, you can put it on other meals! I highly recommend this sauce for cooking with fish. It pairs very well with shrimp, salmon, lobster or scallops. Tortellini with Lemon Sauce

Tortellini with Lemon Sauce

Ingredients

  • 1 pound Tortellini (we used fresh, cheese tortellini)
  • 4 tablespoons Butter
  • 1 cup Heavy Cream
  • 3 tablespoons Lemon Juice
  • 1/2 cup Pancetta, diced
  • Salt and Pepper
  • Fresh Basil
  • Grated Lemon Zest

Instructions

  1. Boil the tortellini and set aside.
  2. In a large sauce pan on medium heat, add the butter, heavy cream and lemon juice. Add salt and pepper to taste. In a separate pan, cook the pancetta. While the pancetta is crisping, remove the sauce from heat and cover.
  3. Toss the tortellini with the sauce and pancetta. Garnish with basil and lemon zest. Enjoy!
