As promised, we are bringing back our three meals, one sauce recipes. We deviated from these posts because of the newly emerging summer heat. As the weather got warmer, we were determined to cook outside or do almost no cooking at all for our meals. However, in Sacramento, we had rain yesterday and today looks pretty cloudy and grey. So, because of this strange change, we are bringing back our tikka masala sauce recipes and are showing you a beautiful and mouthwatering comfort meal. These tikka masala enchiladas were so different and yet tasted so incredible and somehow familiar. If you are looking for a fast and unexpected comfort food, look no further.




What we love most about these enchiladas is that they are something we have never had or heard of before. Somehow, tikka masala sauce on top of mozzarella cheese and tortillas, works perfectly! In order to give it a delicious balance, we also made a creamy guacamole by mixing avocados with Greek yogurt. This sauce gave the perfect bite to the enchiladas since Greek yogurt pairs beautifully with tikka masala. Even though this recipe was so unique, it tasted very familiar, rich and amazing!




 




If the weather keeps being gloomy all summer, we will be sharing more comforting dishes with you. However, I hope it will clear up soon so that we can share fresh, seasonal foods! This summer, we are excited to bring more foods with seasonal veggies and meals that require less cooking. When the weather warms up, we love foods that are ready in minutes and meals that do not use the oven or stove. These are essential when the temperatures are in the 100s. No one wants to preheat the oven when it is so incredibly hot outside!

Tikka Masala Enchiladas

Tikka Masala Enchiladas

Ingredients

    For the Sauce
  • Tikka Masala Sauce
  • For the Enchiladas
  • 6-8 Corn Tortillas
  • 1 1/2 cups Mozzarella Cheese, shredded
  • 1/4 cup Cilantro, chopped
  • 1 Tomato, chopped
  • For the Guacamole Sauce
  • 1 Avocado, mashed
  • 1/2 cup Greek Yogurt
  • Salt and Pepper

Instructions

    For the Sauce
  1. Tikka Masala Sauce
  2. For the Enchiladas
  3. In a greased, medium skillet and without heat, lay out each tortilla and evenly fill it with cheese. Roll each one in the skillet so that the tortilla is on the bottom and the cheese is in the middle. Place the skillet with all filled tortillas on the skillet and cook on medium heat for about 8 minutes, allowing the cheese to melt. Pour sauce on top of enchiladas and cook for another 8 minutes. Remove from heat and garnish with cilantro, any remaining cheese and tomato.
  4. For the Guacamole Sauce
  5. Mix the avocado and Greek yogurt together until smooth. Season with salt and pepper to taste. Place it on top of the enchiladas. Enjoy!
