Sometimes the best food ideas are born from zany cravings. When we make our food more creative, we tend to stay within a box. This is not to say that our food never gets too out there, but we tend to stay safe when we combine different ingredients together. When we make our own creations, they tend to still feel familiar and not too different. This time, when we made these tikka masala chicken meatball subs, we experimented with flavors that we never had combined or experienced before. Never before had we eaten tikka masala with meatballs or on a sourdough roll. These flavors together in sandwich form were such an incredible decision!

It has been so much fun experimenting with sauces as we have explored using one sauce for three meals. This idea has made us so much more creative in our cooking! When we make one sauce, we tend to use it in a standard way. However, when we need to stretch it to use it on other meals, we begin thinking more inventively. Instead of making just standard chicken tikka masala (which was so tasty and will be coming your way soon), we also used the sauce in more unique and fun ways. The minute we challenge ourselves to use the sauce again, creative recipes start appearing. In turn, we are having more fun eating our unique and innovative food. This meatball sub was made in a way that felt so fresh and different while also tasting so comforting and delicious. We love how we had never eaten anything like it before, and yet it tasted like it was just so right.

When we bit into these tikka masala chicken meatball subs, we were in disbelief by all of the amazing flavors! The juicy meatball paired with the rich sauce was such a delicious treat. After I quickly devoured this sandwich, I wanted to have it again and again. Even though this meatball sub is a different idea, I know it will become a staple in our house that we will have to share with guests soon!

Try these subs for a tasty, weeknight meal. If you want to make it even faster, skip the homemade sauce and meatballs, and place a delicious jarred sauce on top of pre-cooked meatballs. However, if you want to impress friends, make the fresh meatballs and sauce in your own home. Both the meatballs and the sauce are so incredibly simple to make and will completely wow anyone who tastes it. We know that if you try this recipe, you will experience the same delicious amazement.

Tikka Masala Chicken Meatball Subs

Ingredients

    For the Meatballs
  • 1 lb. Ground Turkey
  • 1/4 cup Breadcrumbs
  • 1 Egg
  • 1 tablespoon Garlic, crushed
  • 1/2 cup Parmesan cheese
  • Salt and Pepper
  • For the Sauce
  • 2 tablespoons Butter
  • 1/4 cup Yellow Onions, chopped
  • 1 1/2 teaspoons Tumeric
  • 1 teaspoon Gram Masala
  • 2 teaspoons Cumin
  • 2 tablespoons Tomato Paste
  • 1 can (28 ounces) Whole Tomatoes
  • Salt and Pepper
  • 1 teaspoon Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 1/2 cups Heavy Cream
  • 1/4 cup Cilantro, chopped
  • For the Subs
  • 3-4 Sourdough Rolls
  • 1/2 cup Cilantro, chopped
  • Feta Cheese

Instructions

    For the Meatballs
  1. Preheat the oven to 350 degrees. In a large mixing bowl, add chicken, breadcrumbs, egg, garlic, cheese and generous salt and pepper. Using your hands, mix the meatballs thoroughly and form into one-inch balls. Place in a greased baking dish or oven-safe skillet. About 10-12 meatballs can be formed.
  2. Bake the meatballs for 30 minutes.
  3. For the Sauce
  4. On the stovetop over medium heat, cook butter and yellow onions. Cook for about 4 minutes, or until onions are soft. Add tomato paste and whole tomatoes. Crush the tomatoes with a wooden spoon or with hands when being added to the pot. Cook for 10 minutes.
  5. Combine gram masala, garlic, ginger, turmeric, cumin, salt and pepper in a small bowl. Mix thoroughly and add to pot. Bring sauce to a boil and then reduce heat and simmer, stirring often. Cook for 10 minutes and allow the sauce to thicken.
  6. Add heavy cream and chopped cilantro to the pot. Cook for another 10 minutes and set aside.
  7. For the Subs
  8. Assemble each sandwich by placing 3 to 4 meatballs in each roll. Pour the sauce over the meatballs. Top with cilantro and feta. Enjoy!
