We have had so much fun creating recipes from our farmers’ markets finds! We quickly went through our market bag this week and loved devouring every fresh vegetable. Each bite of the local produce was so tasty. The veggies were even more delicious to us because they were from local farmers and were found right here in Sacramento. There is something so rewarding about eating produce from our own backyard. We had a great time creating simple and fun recipes from the tasty finds from our Downtown Sacramento Farmers’ Market. This dish was one of the easiest we made this week and the great taste completely amazed us! Swiss Chard Pesto Pasta

After our first shopping trip to the farmers’ market, we have been dreaming up more recipes to create with seasonal ingredients. This exciting endeavor has allowed us to make and enjoy meals that I never thought we would create. Never would I have purchased fennel or swiss chard or kale. However, this new effort is allowing us to make healthy and delicious meals with fresh and incredible ingredients. It is also motivating us to support locally sourced foods and eat healthier ingredients. Without this new choice, we would have never embarked upon this simply amazing swiss chard pesto pasta.




Swiss Chard Pesto Pasta

My favorite thing about this pasta is that it tasted like a fresh, fantastic garden. The pesto enveloped every noodle, painting it with a beautiful pink tone. It was the most gorgeous sheen I have seen in a pesto. Besides the wonderful color, the flavor was overflowing with freshness. Every time I took a bite, I was welcomed with such crisp tastes. In just a matter of minutes, we were able to produce the most delightful pesto. Best of all, it only took a few ingredients to create it. With just pine nuts, swiss chard, parmesan cheese and olive oil, we had our most favorite pesto we have ever tried.

After devouring all of the swiss chard pesto pasta, we were convinced that it is something everyone should try. If you are someone like me who is shy to use vegetables out of your comfort zone, I encourage you to start your transformation with this recipe. With so many nutrients packed into a scrumptious pesto, you will realize how easy it is to cook with fresh and uncommon veggies. We know that the minute you try this, you will be making more meals with this tasty vegetable. After you take a few bites, we challenge you to not eat all of the pasta in one sitting!

Swiss Chard Pesto Pasta

Swiss Chard Pesto Pasta

Ingredients

    For the Pesto
  • 2 cups Swiss Chard, chopped
  • 1/2 cup Pine Nuts
  • 1 tablespoon Garlic, minced
  • ½ cup Olive Oil
  • 1/4 cup Parmesan Cheese
  • 1 tablespoon Lemon Juice
  • Salt and Pepper to taste
  • For the Pasta
  • 1 pound Rigatoni Pasta
  • 1 cup Cherry Tomatoes, halved
  • For the Garnish
  • Pine Nuts
  • Fresh Basil, chopped
  • Parmesan Cheese

Instructions

  1. Cook and drain the pasta. Set aside.
  2. In a food processor, add the swiss chard, pine nuts, garlic and parmesan cheese. Slowly pour in the olive oil. Blend until smooth. Finish with lemon juice, salt and pepper.
  3. Spoon the pesto onto the pasta. Mix until all of the pasta is coated. Top with pine nuts, basil and cheese. Enjoy!
