I do not know about you, but the premiers of fall television are pretty exciting. As the days are getting cooler and the sun is leaving sooner, we are loving cozying up on the couch and discovering new shows. With both of our jobs taking up more of our time, it is so fun to cook a quick dinner and delve into thrilling premiers together. Sometimes it is so refreshing at the end of the day to step into a make believe world and imagine journeying alongside new characters. Cooking a fast and delicious dinner to accompany this ride has been our newest endeavor. This recipe did just that. When we made this sweet potato pot pie, we were blown away by the flavors and simplicity. With very little effort, we were able to make these and then devour them in front of a new, exciting television show.




Sweet Potato Pot Pie

Dan just recently started eating pot pies. One of his first encounters with this incredible dish was when we created our lobster pot pies. Last week we found ourselves craving that exact same dish. Since that was a perfect summer dish, we wanted to put both a fall and a simple spin on it. Instead of seafood, we knew we wanted to use rustic vegetables and a creamy filling. As we went shopping for the ingredients, we let our stomachs do the picking. With the weather becoming so crisp and cool, we were hungry for a fall staple – sweet potatoes. We quickly knew that this vegetable would be the spotlight of the dish. Accompanying it with other delicious vegetables, made this meal a real winner.




Sweet Potato Pot Pie

This sweet potato pot pie is surprisingly easy to make! We decided to buy fresh vegetables, but you could easily buy frozen, mixed veggies and add them into the soup. You could also buy freshly cut sweet potatoes and onions from the grocery store. How easy is that? It would be instant comfort food on a fall day! We love making recipes accessible and fool proof, and this one did just that!

Sweet Potato Pot Pie

Ingredients

  • 1 Chicken Breast, cubed
  • 1/2 an Onion, chopped
  • 1 Sweet Potato, chopped
  • Olive Oil
  • Salt and Pepper
  • 1 can Cream of Chicken Soup
  • 3/4 cup Frozen Peas
  • 1 sheet Pastry Puff
  • 1 Egg

Instructions

  1. Preheat the oven to 375 degrees. Cook the chicken breast until it is no longer pink and cut it into small pieces. While it is cooking, chop the onion and sweet potatoes. Place the vegetables in a pyrex and roast them for 35-40 minutes.
  2. In oven safe bakers or a small baking dish, pour the can of soup evenly into the dishes. Stir in the chicken, roasted vegetables and peas.
  3. Place the pastry puff evenly over the dish or two dishes. Brush the egg whites over the pastry puff. Bake for 15-18 minutes or until pastry puff is golden brown. Enjoy!
