Just looking at this burger makes my mouth water all over again. This Sweet potato burger with cashew sauce had the best texture and taste and left me completely satisfied. It was unlike anything I had ever tried and was so rich and creamy. With a sauce that was oozing with garlic and spice, this healthy burger was so fun to make. When we first dreamed up this burger, I had no idea how it would taste. I knew the combination would be delicious but could not envision how exactly it would come out. When I finally took a giant bite, I was so blown away by it. Never had I tried a burger quite like it. Both creamy and filling, this delicious burger was packed with flavor and healthy ingredients. With every rich bite, there was absolutely no guilt in devouring the entire thing.

After coming up with the idea for the burger, we then had to figure out how to execute it. Because it was like no other food item we had ever tried, it was tricky to figure out how to perfectly create it. We decided to use our food processor to complete both the sauce and the patties. When we began making the sauce, it was pretty easy to quickly come up with a great flavor. With cashews for the base, it was simple to add garlic, salt and pepper to achieve the best possible taste. As for the patties, they surprised us with their ease. I was a bit intimidated to begin them, but once I started, my taste testing led to an incredible vegetarian patty.

I know that we will be making this sweet potato burgerĀ again and again. We loved how they were both simple and healthy. Adding those important aspects to our meals recently has been so enjoyable. We know that when we make something effortless yet tasty, it is a worthwhile recipe. Even better, when it is amazingly healthy, we become so excited to make it even more often. Make these burgers for a busy weeknight treat or for kids who refuse to eat their vegetables. I have a husband that I tricked into eating these veggie-packed burgers, so if I can do it, you can surely trick your kiddos. Sweet Potato Burger with Cashew Sauce

Ingredients

  • 1 Sweet Potato, baked and peeled
  • 1 can Cannellini Beans
  • 1 teaspoon Garlic Powder
  • 2 tablespoons Garlic, minced
  • Salt and Pepper to taste
  • 1 Egg
  • 1 cup Panko Bread Crumbs
  • Olive Oil
  • 2 cups cashews
  • 1 cup vegetable broth
  • 2 tablespoons Garlic, minced
  • Salt and Pepper to taste
  • 2-4 Hamburger Buns
  • 1 Avocado, sliced
  • Arugula

Instructions

  1. After baking the sweet potato, chop it and place it in a food processor. Add the beans, garlic powder, and garlic. Blend until it is almost smooth, about 1 minute. Add salt and pepper to taste.
  2. Pour mixture into a bowl and stir in the egg and panko. Form into patties (makes about 4 medium patties). Fry in olive oil for about 4 minutes on each side. Set aside.
  3. To make the sauce, place cashews, broth and garlic in the food processor. Blend until smooth.
  4. Place the patties on the bun with the arugula, avocado and sauce. Enjoy!
