With Independence Day just around the corner, we have a recipe that guests will love to indulge in at a backyard get-together. Using fresh produce that can easily be found in the garden, these summer garden pita nachosĀ are a perfect, summer delight. We love the versatility that comes with making nachos. When we came up with the idea of using pita chips instead of tortilla chips, a whole new list of ingredients started to pile onto our shopping list. With fresh summer finds, these nachos are like eating right out of an overflowing garden! We love how every bite tasted garden fresh and fantastic. If only we had a garden of our own to place chopped produce on top of this beautiful plate of baked pita chips.

Every summer brings me memories of being out on the farm with my dad. When the weather heats up, I can literally smell fresh corn and tomatoes when I start daydreaming. The smells that those memories bring me make me want to create recipes that use fresh, summer flavors. With corn, tomatoes, onions and basil, these summer garden pita nachos perfectly embody summer and all of my memories growing up on the farm. After we made this gorgeous plate and I put it on the table to devour it, I said several times how lucky I was to eat something this amazing. Each perfect bite tasted just how you would think summer would taste.

Since we are in the midst of moving, we definitely will not be hosting a Fourth of July get-together. However, I can see how this dish would be the perfect appetizer to serve to guests. Every guest will be so excited to fill their plate with such freshness. On a warm day outside, this would be the best treat to enjoy with friends and family.

If you have a garden at home, I am so incredibly envious of you! Lucky for you, this is such a fun and amazing dish to make to utilize all of your fresh, garden picks! Even if you do not have all of these summery ingredients, I could imagine adding other treats such as snap peas or cucumbers to the mix. Anything that would compliment the crispy and baked pita chips would be a delight! We hope that when you make these incredible and versatile nachos, you two will be saying how lucky you are to eat something so fresh and fun.

Summer Garden Pita Nachos

Ingredients

  • 1 bag Pita Chips
  • 3 tablespoons Olive Oil
  • 1 cup Mozzarella Cheese
  • 4 Strips of Bacon, cooked and chopped
  • 1/4 cup Sour Cream or Greek Yogurt
  • 1/2 packet Guacamole Mix
  • 1 Red Onion, chopped
  • 1 Ear of Corn, cut
  • 1/2 cup Cherry Tomatoes, sliced
  • 1 Peach, sliced
  • 1 Avocado, sliced
  • 1/2 cup Feta Cheese
  • 4 sprigs Basil
  • 1/4 cup Sunflower Seeds

Instructions

  1. Preheat the oven to 375 degrees. Place pita chips in a baking dish. Drizzle in the olive oil, making sure that all chips are lightly coated. Evenly lay the cheese on the pita chips and place in the oven for about 10 minutes or until bubbly and melted.
  2. While the chips are in the oven, cook the bacon to desired crispness and chop it when bacon is cooled.
  3. In a small dish, mix the sour cream or greek yogurt with the powdered guacamole mix. Set aside.
  4. When the nachos are finished baking, top them with the bacon, sour cream mixture, red onion, corn, cherry tomatoes, peach slices, avocado slices, feta, sunflower seeds and basil. Enjoy!
