This recipe is definitely going to be our go to throughout the entire summer. How could you go wrong with crispy crostini, incredible toppings and a (almost) no-cook recipe? After devouring so many of these tasty little morsels, I knew that this would become my new favorite thing to make quickly, all summer long. We love recipes that are nearly foolproof. Given that we are shifting into making fresh, summer friendly meals, we have a lot of tasty leftover ingredients. While these variations were completely wonderful, adapting them in any way to suit your own left over ingredients, would be a fun and creative choice. After the crostini were toasted and the scrumptious cheese mixture was spread on top, it was so simple to layer flavorful tastes on top of each bread slice. Ingredients

  • 1 Baguette, sliced 1/4 inch thick
  • 1/2 cup olive oil
  • 1 cup Cream Cheese
  • 1/2 cup Goat Cheese, crumbled
  • Salt and Pepper
  • For the Nectarine Crostini
  • 1 Nectarine, sliced
  • 6-8 sprigs Thyme
  • 2 tablespoons Honey
  • For the Blackberry Crostini
  • 1 cup Blackberries (we used frozen)
  • 1 tablespoon Sugar
  • 1 tablespoon Water
  • 2 Basil Leaves, cut
  • For the Fig and Prosciutto Crostini
  • 3 Slices Prosciutto, cut into small pieces
  • 4 Figs (we used dried figs), sliced
  • Balsalmic Glaze
  • Small Basil Leaves

Instructions

  1. Preheat oven to 375 degrees. Place baguette slices on a baking sheet. Brush both sides with olive oil.
  2. Bake for 12 to 15 minutes, or until golden brown. Let cool.
  3. In a mixing bowl, blend cream and goat cheeses until thoroughly mixed. Season with salt and pepper. Spread each baguette evenly slice with the mixture.
  4. For the Nectarine Crostini
  5. Top some of the crostini with slices of crostini and thyme. Drizzle honey on top.
  6. For the Blackberry Crostini
  7. In a small saucepan, heat the blackberries with water and sugar. Cook for about 5 minutes and remove from heat. Top the crostini with the blackberry mixture and basil.
  8. For the Fig and Prosciutto Crostini
  9. Top each crostini with prosciutto, one fig and a basil leaf. Drizzle balsamic glaze on each slice.
