What do candy, pumpkins and witches have in common? No, I’m not talking about visiting your crazy family’s house. It’s Halloween! Picking out the perfect Halloween costume was challenging, and sometimes a daunting task. Not because I didn’t know what I wanted to be, but it was tough trying to find that perfect balance of trendy and cool. Since moving to Sacramento, I haven’t had to worry about costume shopping because we didn’t have one trick-or-treater in two years. We’ve now been in our home for two months and yesterday we learned from our neighbor that our block is a hot spot for candy seekers.




 

Apple Stuffing Acorn Squash




Due to this newfound information, the last two weeks I’ve found myself reminiscing about my third grade dilemmas of what to be for Halloween. Do I dress up like a vampire? Perhaps take the easy way out and be a baseball player? Or somehow convince my wife to do a couples costume and be Moana and Maui… Where Allie goes as Maui and I as Moana. Regardless of these huge decisions, we can always count on one thing this time of year. Harvest.




 

Acorn Squash Easy

Now that it’s fall, Allie and I tend to cook meals that remind us of the word “harvest.” With her dad deep in harvest, it is something we tend to think about this time of year. We typically find ourselves no longer looking to barbeque, but rather cook meals like soup, stew or something with pumpkin. Always looking to try something new, Allie suggested we cook a meal with acorn squash.




 

Acorn Squash Stuffing

Stuffed Acorn Squash is something that I was pretty hesitant to try. Don’t get me wrong. Allie can make anything taste pretty fantastic. However, with the word acorn in the title, this idea had me quickly running for the hills. Once she walked me through the steps and we effortlessly pulled this meal off, I was able to sit back and appreciate how delicious it really was.




Easy stuffed Acorn Squash With baked apples, stuffing and cranberries, these stuffed acorn squash are completely tasty. In a few steps, the perfect bite of fall is ready. In very little time and with very little energy, you can have a simple and healthy fall dish. Even though I was pretty hesitant at first, these stuffed acorn squash are my new, favorite meal. When trick or treaters come by next week, we will definitely be enjoying these fresh and fun stuffed squash. If you are skeptical like I was, I know that these will change your mind, even on the very first bite!




Acorn Squash with Apple Stuffing

Acorn Squash with Apple Stuffing

Ingredients

  • 2 Acorn Squash, cut in half
  • 2 tablespoons Olive Oil
  • Salt and Pepper
  • 1 Apple, chopped
  • 1 box Stuffing
  • 1 1/2 cups Water
  • 1/4 cup Parmesan Cheese, grated
  • 1/4 cup Dried Cranberries

Instructions

  1. Preheat oven to 425 degrees.
  2. Halve the acorn squash from each pointy end. Remove the seeds and rub with olive oil. Season with salt and pepper. Turn squash halves over and place in a baking dish. Quarter the apple and place in the same baking dish. Place in oven and bake for 25 to 30 minutes.
  3. Mix stuffing and water and cook on stovetop according to package directions.
  4. Once the acorn squash are roasted, evenly spoon in the stuffing. Top with baked apple, cranberries and parmesan cheese. Enjoy!
