If this recipe does not make you want to take a bite of summer, I do not know what else will. Just looking at these street corn sausage dogs makes my mouth water for this perfectly barbecued treat. When we made these sausage dogs, we knew that they were going to be good. However, when we ate them, we realized how fantastic they truly were. With amazing tastes of summer, these sausage dogs were the most delicious and juicy things to grill on a hot day.

We absolutely love our new grill! Well, it is not exactly a new grill. Dan got it for Christmas two years ago from my parents and we just set it up this winter. It has been the best thing to use on these hot days in Sacramento. After we grilled one meal, we were definitely hooked! We were pretty disappointed that it took us so long to use it! Now that it is up, we try to think of how we can sneak all of our dishes onto the grill so that we can cook them outside. Whether it is a fast lunch, a slow roasting dinner or a tasty dessert, our grill has come in so incredibly handy.

These street corn sausage dogs were so completely simple and fast to make. Dan grilled the dogs, corn and buns outside while I quickly chopped the ingredients and mixed the toppings together. In less than thirty minutes, we had an amazing lunch to enjoy on our patio. We loved how quickly the dogs came together and how the street corn added an amazing aspect to the meal. We have enjoyed street corn made by food trucks before, but had never made it on our own. Taking a fresh and healthy spin on it, we used Greek yogurt, sriracha and avocados. This combination made the most perfect, balanced topping.

With just one bite, I knew that these sausage dogs were a complete delight. Make them for a family barbecue or to enjoy outside on a weeknight. Street Corn Sausage Dogs

Ingredients

  • 6 Sausage Dogs of choice
  • 6 Sourdough Rolls
  • 1 Ear of Corn, grilled
  • 1 Avocado, diced
  • 1/2 cup Cherry Tomatoes, halved
  • 1/4 cup Feta Cheese
  • For the Sauce
  • 1 cup Greek Yogurt
  • 2 tablespoons Lime Juice
  • 1 1/2 teaspoons Sriracha
  • Salt and Pepper to Taste

Instructions

  1. Grill the sausages, sourdough rolls and corn on a grill, turning every so often. Grill to the desired amount for each item. Set aside.
  2. In a mixing bowl, add avocado, cherry tomatoes and feta cheese. When the corn is cooled, slice the grilled kernels from the ear of corn and add to the mixture. Stir and top each dog with equal amounts.
  3. For the Sauce
  4. In a small bowl, mix the Greek yogurt, Sriracha, salt and pepper and lime juice together. Add more sriracha and salt and pepper as desired. Top each dog with the sauce. Enjoy!
