If someone were to search through all of our recipes and look for a common denominator, the one same factor would be cheese. We LOVE cheese. Whether it tops a dish or is the main ingredient of a delicious meal, we are obsessed with this rich and amazing ingredient. We love cheese so much that sometimes it is our main and only dish for the evening. Some of our favorite dinners have been perusing the cheese aisle at the grocery store and choosing a few gourmet cheeses to devour with a side of crackers. Naturally, when it came time to decide what to make for dinner last week, we went straight to a meal that was centered around cheese. Furthermore, with our recent kick for making skillet dinners, we married the two ideas and came up with skillet enchiladas. Gushing with cheese and flavor, these incredibly quick enchiladas were to die for delicious.




Skillet Enchilada Large LiftSince I am a teacher and back to school time is right around the corner, finding quick meals that are both easy and tasty are a must. With the rush to get my classroom ready and still have time at night to make a healthy meal, it is essential that we make dinners that are packed with ease and great flavor. These skillet enchiladas did just that. In just twenty minutes, we had a dinner that was from start to finish amazing and required very little preparations. With an avocado cream finish and incredible cheesiness, these skillet enchiladas were a perfect, busy weeknight meal.

Before the stress of back to school truly kicks off, we will be celebrating my end of summer with an awesome opportunity. This weekend is the International Food Blogger Conference and we are so lucky that it is in Sacramento this year! This will be our first conference as bloggers and we are so excited to see what is in store. We are thrilled for the opportunity to learn more about food blogging, cooking and growing our site. Last year, we did not even imagine attending something like this (or let alone imagine even having a food blog), so thinking about all we will take from it and use for the coming year is an exciting thought. While we have only a vague idea about what we will take in, we know from others’ recommendations and past reviews that the International Food Blogger Conference is an excellent experience. We will keep you informed about what we learned and encountered soon! For now, check out these simple enchiladas and try them on a busy day to slow down and enjoy your cheesy and delicious dinner!

Skillet Enchiladas

Skillet Enchiladas

Ingredients

  • 1 can Enchilada Sauce
  • 6-8 Taco Flour Tortillas
  • 2 cups Monterey Jack Cheese
  • 2 Avocados
  • 1 cup Greek Yogurt
  • Salt and Pepper

Instructions

  1. Pour the enchilada sauce in a skillet on medium heat. While the sauce is warming up, lay a tortilla down and place desired amount of cheese (and/or shredded chicken if desired) in the center of the tortilla. Roll each tortilla. When the tortillas are rolled, place them in the sauce and cook for about 5-10 minutes or until the cheese is fully melted. Top with remaining cheese.
  2. For the sauce, place 2 peeled avocados in a food processor and scoop in the Greek yogurt. Blend until the consistency is smooth. Season with salt and pepper and top the enchiladas with the desired amount. Enjoy!
