This Back to School Pasta Skillet is perfect for any night when you are in need of a quick and easy dinner. Our pasta recipe is highly recommended to you if you are a parent, or have a high stress job. Allie is a pre-school special education teacher, so during the school year her she is extremely busy. When she begins teaching we have noticed dinners transform from elaborate dishes such as our Lobster Pot Pie, to more time saving meals. Easy pasta recipes such as this are perfect for people looking to save time and quickly cook a delicious meal.

The inspiration for this meal comes from being married to a teacher, and the concept of Back to School. The goal was to create a stress free dish. We knew we wanted to make a pasta recipe for this post, but we really wanted to relate it to parents with children soon starting school. We are all about making meals that cause less stress, so trying to create a delicious yet simple meal was challenging. Growing up, every night my parents made dinner and our family would sit together at the table. Some nights the meals were time consuming, while others were simple. There is nothing wrong with a simple meal, especially when you have young children.




Pasta is a dish that most people love. It is simple to make, yet you can add whatever you want to flare it up. We love that this dish is another one of our open your refrigerator and add whatever you want style. For this recipe, we wanted to give parents the idea of hiding vegetables in the main dish. We have found that frozen peas is an excellent way to do this. We had a package of frozen broccoli and meatballs from a previous dinner, so we decided to add both. Although we do not often cook with frozen foods, the idea of quickly cooking food on a stressful night is appealing.

Cooking a meal with frozen food is certainly beneficial if you have young children. Not only are meals quick, but it can keep you out of the kitchen more which means more eyes on your little one(s). We prepared the frozen food in the microwave or skillet pending on the instructions. After the meals were cooked, we combined all the ingredients into a cast iron skillet, and added cheese. This easy and fun dish is full of vibrant colors which will appeal to any picky eater.

Back to School Pasta Skillet

Ingredients

  • 1 lb. Pasta Shells
  • 1 bag Frozen Meatballs
  • 1 bag Frozen Broccoli
  • 1 cup Frozen Peas
  • 1 jar Pasta Sauce
  • 1 cup Mozzarella Cheese, shredded
  • 1 cup Spinach, chopped for garnish

Instructions

  1. Bring a large pot of water to a boil, and add the pasta.
  2. In a small skillet pan, cook the meatballs according to the directions.
  3. When both pasta and meatballs are finished, add them together in large cast iron skillet.
  4. Cook the broccoli and peas according to the instructions on the bag.
  5. Add the vegetables to the pasta and meatballs.
  6. Bring to a simmer together on medium heat.
  7. Top with sauce and cheese. Enjoy!
