With a simple blackberry compote, vanilla ice cream, and easy pie crust cookies, this easy dessert tastes just like a pie but without all of the complications of making one. Recently when my sister was over, she and I made this together. Together, we are notoriously chaotic in the kitchen, but really wanted to make a dessert we had been craving. Without having to take all of the crazy steps of making a pie, we skipped almost every one and threw together this delicious dessert. With every bite we were seriously amazed at our random and fantastic concoction.




 




If you have kids, this would definitely be a fun recipe for them to help you with. My younger sister and I definitely embodied children as we made each pie crust cookie. If it weren’t for our fall leaf cookie cutters, we would have been even more ridiculous and made an even bigger mess. Let me just tell you, you would have thought we were children by the mess and racket we made. However, if we had fun sprinkling sugar everywhere and stamping out cookies from pie crust, then your kids totally will too.

 




What I love best about this dessert is that it is basically a deconstructed pie. Pie is hands down my favorite dessert, and getting to have it in this easy form, made it even more delicious. There is something so satisfying about cutting corners in the kitchen and getting an incredible treat from the shortcut. To make this recipe even easier, you could also buy pre made pie crust and only have to make the very simple blackberry compote.

Blackberry Ice Cream and Pie Cookies

Ingredients

  • 1 carton Vanilla Ice Cream
  • For the Pie Crust Cookies
  • 2 1/2 cups Flour
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 2 sticks Butter, chilled and cut into pieces
  • 4 tablespoon Water, cold
  • 2 tablespoons Coarse Sugar or Clear Sprinkles
  • For the Blackberry Compote
  • 1/2 cup Water
  • 1/3 cup Sugar
  • 3 cups Blackberries, fresh or frozen

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large mixing bowl, add the flour, salt and sugar. Stir until mixed thoroughly. Using a pastry blender, add the butter in pieces, on at a time. Mix until it is coarse.
  3. Add the cold water and pulse until mixed. Mix dough with hands to bring it together. Wrap in plastic and chill for 30 minutes.
  4. Roll the dough on a flour surface and cut out leaves in the dough. Sprinkle with coarse sugar or clear sprinkles and place in oven for 10 minutes.
  5. For the Blackberry Compote
  6. In a saucepan, bring water and sugar to a boil. Stir until the sugar is dissolved. Add the blackberries. Boil until the mixture is reduced.
  7. For the Ice Cream
  8. Place compote over three scoops of vanilla ice cream. Top with pie cookies. Enjoy!
