It is so incredibly hot where we live. We are constantly consuming water and are always looking for ways to cool off. With this persistent desire to be cool, we have been trying to find recipes that help with this need. From avoiding the oven to adding refreshing tastes to our meals, we have been searching for ways to make sure we are not overheating in the hot Sacramento temperatures. These peach and chicken tostadas do just that. Without using an oven and adding a refreshing fruit to the top, these tostadas were a perfect summer treat.




Peach Tostadas

Dan and I love Mexican food and are always looking for ways to introduce a unique spin on our favorite dishes. Using peaches and adding a fresh, zesty sauce to the top, helped it to become a perfect summer meal. The balance of the fruit with the chicken and spices was a great combination. Each bite was so delicious, making us so excited to prepare these quick treats again. Not only were they completely simple to make, but they were also the ideal dish to make to beat the heat.

Peach Tostadas

While staying out of the sun is essential this summer, we cannot help but be outside. With the weather so nice and so many fun things occurring in our area, we are trying so hard not to stay in our amazing, air conditioned home. The pool, the State Fair and parks are calling our names! Even though getting outside is sometimes unbearable, we are finding other ways to keep cool. Stay tuned for more summer dishes that avoid ovens and hours working over the stove. Those dishes are perfect for the winter and seem so intolerable right now. Enjoy these chicken and peach tostadas on a weeknight, or make them easily and quickly for a crowd. They are so light and quench your thirst with each delicious bite. Above all, be sure to have them after spending a hot day outside. They will be even more tasty and satisfying.

Peach Tostadas

Peach Tostadas

Ingredients

  • 1 Chicken Breast
  • Olive Oil
  • 2 Peaches, sliced
  • 1 Cup Shredded Cheese
  • 1 Cup Refried Black Beans
  • 6-8 Corn Tortillas
  • 1/4 Cup Cilantro, Chopped
  • 1 Lime
  • For the Sauce
  • 1 1/4 Cup Ranch Dressing
  • 1/4 Cup Salsa
  • 1/2 Squeezed Lime

Instructions

  1. Cook the chicken breast on the stove with olive oil in a medium sized skillet until both sides are browned and chicken is fully cooked. Remove from heat and shred chicken with a fork.
  2. Slice the peaches and chop the cilantro. Warm the tortillas and beans on the stove top. Place the chicken on the tortillas and top each with peaches, cilantro, beans and cheese.
  3. For the sauce, mix the ranch, salsa and lime juice in a small mixing bowl. Top the tostadas with a generous amount. Enjoy!
