It is so incredibly hot where we live. We are constantly consuming water and are always looking for ways to cool off. With this persistent desire to be cool, we have been trying to find recipes that help with this need. From avoiding the oven to adding refreshing tastes to our meals, we have been searching for ways to make sure we are not overheating in the hot Sacramento temperatures. These peach and chicken tostadas do just that. Without using an oven and adding a refreshing fruit to the top, these tostadas were a perfect summer treat.
Dan and I love Mexican food and are always looking for ways to introduce a unique spin on our favorite dishes. Using peaches and adding a fresh, zesty sauce to the top, helped it to become a perfect summer meal. The balance of the fruit with the chicken and spices was a great combination.
