Leftovers are my favorite. I love opening my refrigerator and being able to savor the delicious food that I created the night before. Devouring that scrumptious meal all over again is such a sweet treat. Even more than leftovers, I love being inventive with my remaining food, and adding delicious ingredients to make it even more heavenly. That is exactly what I did with my leftover Chicken Basque. Rather than eating it again, I put a spin on the flavorful meat and made a mouthwatering open face sandwich. Using apricot jam, fresh peaches, crumbled blue cheese and drizzled honey, this sandwich had the most incredible flavor combinations.
A great aspect of this sandwich is that almost any leftover chicken or turkey dish would be delicious. Whether it is a savory or sweet leftover chicken, the combination from the remaining ingredients would work well. The spices of the Chicken Basque balanced well with the fruit favors, as would another savory chicken dish. Stacking each of the elements on top of the toast created for amazing tastes with every bite.
Probably my favorite part of the sandwich was the incredible ease that it brought. Dan and I came back from the pool and put this masterpiece together in a matter of minutes. Given that it is summer, meals like this are mandatory. The best part of summer is inventing no-cook, fresh dishes that are bounding with both creativity and flavor. Devising this meal required a hungry girl in the grocery store and a desire to combine all of my favorite tastes on one piece of toast.
