This weekend, the rain is making us want to curl up with blankets and eats lots of delicious soup. Of course, we have been out and about in the rain all weekend. But there is something about a stormy day that urges me to put a pot of soup on the stove. Our favorite part of soup is that it is so incredibly effortless to make. After choosing all of the essential flavors, it is so comforting to let it simmer on the stove and take in the incredible aromas. We love picking out produce to pour into the broth and getting excited by fresh, flavorful soup. This delicious minestrone soup with ravioli was the perfect comfort food for a rainy day. We enjoyed listening to the rain while devouring every last vegetable. The flavors were so amazing and made us so eager to spend the blustery day inside, devouring minestrone.




Minestrone Soup with Ravioli




Before making homemade soup, Dan and I were fans of buying soup in cans or plastic grocery store containers. We loved the convenience of having instant and tasty soup. However, the minute we started making our soup from scratch, the flavors were game changing. Each fresh vegetable and bubbly spoonful of broth, caused us to be convinced by the powers of homemade soup – especially this homemade minestrone soup with ravioli. Besides the freshness, the smells that fill a home are entirely worth every small effort to make soup.

Minestrone Soup with Ravioli

Minestrone Soup with Ravioli

Ingredients

  • Olive Oil
  • 1 Onion, chopped
  • 2 Garlic Cloves, minced
  • 2 Celery Stalks, chopped
  • 3 Carrots, chopped
  • 1 Potato, chopped
  • 1 Zucchini, chopped
  • 4 cups Chicken Stock
  • 1 can of Garbanzo Beans
  • 1 (14 ounce) can Stewed Tomatoes
  • Salt and Pepper
  • 8-ounce package of Cheese Ravioli
  • 3 tablespoons Pesto
  • Grated Parmesan Cheese

Instructions

  1. Chop all vegetables and set aside. In a stockpot, add olive oil, onions and garlic. Cook until onion is softened.
  2. Add the chopped celery, carrots, potato and zucchini and stir for about three minutes.
  3. Pour in the chicken stock, garbanzo beans and tomatoes. Generously season the broth with salt and pepper. Bring the soup to a boil, then reduce the heat to a simmer. Cook for 30 minutes or until all of the vegetables are soft and tender.
  4. While the soup is simmering, cook the ravioli. Add to soup and cook for another 10 minutes on low heat. Serve garnished with pesto and Parmesan cheese. Enjoy!
