Just like pizza, Dan and I are huge fans of Macaroni and Cheese. If you have not had time yet, check out our flatbread pizza recipe. Macaroni and Cheese is both of our favorite comfort food. On a rainy day or a cold day or on a random Tuesday, we are always huge fans of digging into this masterpiece. Although any spin on Macaroni is welcome, we wanted to create a twist that seemed ‘fancy’ and unexpected. As we perused the grocery aisles, we looked for ingredients that surprised us and also made us eager to add it into our Macaroni. Using cheeses that we have never tried in Macaroni, and classic choices to jazz up our dish, we knew that this version would be incredible. Boy, were we right.
The combination of cheddar, blue cheese and Muenster, blew us both away! It was a sharp yet rich balance that was so enticing! The mixture was so new, that each bite was a definite treat. The addition of salty bacon and fresh peas, created a taste and texture that made each bite phenomenal. Using these ingredients allowed us to experience a more ‘grown-up’ taste that made the dish even more rewarding!
When cooking this meal, it is best to use a Dutch oven or an oven safe baker. We love our Dutch oven and purchased it this winter for a wonderful, low price! We never thought that we could afford one, and when we went shopping, we realized how affordable they can be! You can adjust the bake time to attain your desired crispiness, but we thought that 30 minutes gave it the perfect crunch. Additionally, the ingredients can be adjusted to make it perfectly what would feel ‘grown-up’ to you. We debated about adding fresh breadcrumbs versus panko, asparagus versus peas, pancetta versus bacon and blue cheese versus feta. Clearly, this dish can be tailored in a way that is most satisfying for you. Ultimately, our combination gave it an adult feel while simultaneously making me nostalgic.
