I do not know what took us so long to think of this idea, but we decided last week to start featuring a monthly risotto on our blog. Dan came to me with the idea one night, and this not so outside of the box plan felt like an extremely smart and creative one. Because of our namesake, we have become incredible fans of risotto. At first, it was the taste that made me a believer in risotto. However, after a few more tries at the tasty dish, I also realized how simple and versatile it truly it is. Given that Valentine’s Day was approaching, Dan brilliantly came up with the notion to make a lobster risotto. I was so in love with the idea and was even more in love with the perfect taste! With this creamy and fun dish, we will officially be kicking off our monthly feature of risotto.




 

Lobster Risotto

Before Dan came up with the idea, I never dreamed of adding lobster to risotto. It seemed like it could work, but when we tried it, it was even more amazing than I thought. With every rich bite, I became so excited to experiment with more ingredients to make for future risottos.




Lobster Risotto

Due to the name of our blog, we have loved trying out various risotto recipes. Given that I never ate risotto until we created our very first blog post, I can now say that I was truly missing out. It is such a simple dish that is so rich and creamy that it seems amazingly fancy. Ever since we first made it, I am hungry to try new ways to dress it up and make it even more wonderful. In the next few weeks, I will be searching for ingredients and ideas to make our next risotto even more fantastic. Lobster Risotto




This lobster risotto was definitely my favorite one we have made! It was so creamy and perfectly seasoned. The addition of lobster made it so mouthwatering and delicious. Every bite was such an amazing treat! Even though we made it for Valentine’s Day, it would be a great and perfect meal for any day of the week. Whether it is made for a few guests or just for two, this dish will wow everyone. The lobster is a perfect addition that will have everybody begging for more. Lobster Risotto

Lobster Risotto

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Lobster Risotto

Ingredients

  • 1 Lobster Tail
  • 1 tablespoon Butter
  • ¾ cup Arborio Rice
  • Salt and Pepper
  • Olive Oil
  • 1 medium white onion, chopped
  • ¼ cup Parmesan cheese
  • 2 tbs. minced garlic
  • ½ cup water
  • 1 ¾ cups chicken broth or vegetable broth
  • 1/2 cup Roasted Corn
  • 2 tablespoons Chives, chopped

Instructions

  1. Preheat the oven to 375 degrees. Using kitchen shears, cut the lobster shell from the open portion to the tip of the tail. Delicately open the shell so that the meat slowly separates from the shell. Check for the digestive track and remove by slicing down the center. Bake for 5 to 6 minutes or 2 minutes per ounce and then broil at 425 for 3 to 4 minutes. Lather with butter. After baking, cut the lobster into small cubes.
  2. Place a medium sized saucepan on the stovetop and turn to medium heat. Pour the chicken broth and water in the medium sized saucepan, and cover. Bring to a boil and reduce heat.
  3. Put a medium size skillet on the stovetop and turn to medium heat. Pour a tablespoon of olive oil into the skillet, and then add the onions. Season with 1 tbs. garlic, salt and pepper. Let this sauté for about 3 minutes. Pour in the Arborio Rice and let it cook for about 2 minutes or until the rice begins to turn translucent.
  4. After cooking, stir for about 4 minutes with a wooden spoon until the liquid is almost gone. Add the corn and parmesan cheese. Keep on the heat, and stir for another 4 minutes until the dish gets creamy. Top with chives and enjoy!
