When a delicious, vegetable filled dish turns out to be the tastiest meal, it is an incredible find. We love when an ordinary dinner can be transformed to be even more flavorful and nutritiously packed. Before shopping at our local farmers’ market, we would have never added kale to enchiladas. However, this new experience of shopping for locally grown produce has given us these amazing kale enchiladas and even more tasty, fresh meals. When these kale enchiladas were complete, we did not know what flavors to expect. Given the amazing aromas, we knew they were going to taste fantastic. However, we had not idea how fantastic they would actually be!




These delicious kale enchiladas were so incredibly cheesy and were packed with amazing flavors from the healthy vegetable. Combining one of my favorite meals with a nutritious vegetable was so fun. It took the guilt out of eating something packed with cheese, and added an unbelievable flavor layer. I have eaten kale before but have never cooked with it. Because it was my first time incorporating it in a dish, I did feel intimidated to use it. However, after we chopped it and added it to our enchiladas, it was an effortless addition that gave so many great tastes.




Kale Enchiladas




With our new desire to purchase and use locally sourced produce, we have had so much fun incorporating fresh vegetables into our dishes. This new way of cooking is even more rewarding for us for so many different reasons. First of all, it is so exciting to go to our local farmers’ markets and peruse the rows full of unique, organic and beautiful items. We love discovering a new vegetable or capturing pictures of vibrant foods. Secondly, we love supporting local farmers. Since my dad is a farmer, I know personally how much time and effort goes into growing food. Making sure that we purchase, use and devour these hard earned foods is the easy part! Lastly, we love getting out and buying healthy ingredients. Not only are we walking in beautiful weather to get our food, but we are also utilizing wholesome ingredients that are able to perfectly fuel us. Kale Enchiladas

After each bite of these kale enchiladas, we were officially hooked. The cheese combined with the salsa, kale and Greek yogurt was simply spectacular. We were addicted to each marvelous bite and loved the oozing cheese that we got from gobbling each one up. After every single enchilada was gone, we did not feel very guilty about devouring the entire dish. Instead, we were filled with wholesome kale and satisfying cheese. Make these wonderful enchiladas for your family or for a quick weeknight dinner for two. They will be so satisfying to anyone who takes a bite. We know you will love them just as much as we did!

Kale Enchiladas

Ingredients

  • 1 1/2 cups Kale, chopped
  • 8-10 Corn Tortillas
  • 1 1/2 cups Monterey Jack Cheese, shredded
  • 1/2 cup Greek Yogurt
  • 1/2 cup Salsa Verde

Instructions

  1. Preheat the oven to 375 degrees. In a medium sized baking dish, start assembling the enchiladas. Begin by layering cheese, kale, salsa and Greek yogurt onto each tortilla. Roll and place next to one another.
  2. When the layering process is complete, place any remaining salsa, cheese and kale on top.
  3. Bake in the oven for 15-20 minutes or until cheese is completely melted. Enjoy!
