These kale and sausage shells are a lightened and delicious comfort dish that are perfect for cold, winter weather.

This time of year, our favorite recipes are comforting yet light. When it starts to get cold, all we want is comfort food. Although we wish we could stuff ourselves with cheese, carbs and everything bad for us, we have figured out a way to eat comfort food in a lightened way. One of my favorite dishes is a pasta bake with piles of gooey and baked cheese. These kale and sausage shells are our lightened version of that incredible comfort food. Packed with flavorful kale and drizzled with tasty Alfredo sauce, this comforting and delicious bake is completely guilt free.

With the holiday sweets piling around us, something we are really trying to do is maintain making healthy foods. When it gets colder, it is so tempting to make our favorite and not so good for us meals. However, with our attempt to still eat healthy meals, we are having fun making over some of our favorite dishes. After we have made a few, we feel pretty inspired to try some more. Kale is something we do not eat a lot, but when we try it, we absolutely love it. Kale is rich in many nutrients, and it offers many health benefits. Even my picky husband loved every bite and was not afraid to go in for seconds. With gooey cheese, creamy Alfredo sauce and crispy sausage, the kale in this dish was perfectly accompanied. If you make this dish, you will love how the kale and the other tasty ingredients perfectly combine.

However, with all of the amazing ingredients packed in this dish, this will definitely become your new favorite. You will love every cheesy and creamy bite and will love walking away guilt-free.

Kale and Sausage Shells

Ingredients

  • 1 box Pasta Shells
  • 1 pound Ground Sausage
  • 2 cups Kale
  • 1 tablespoon Garlic
  • 1 tablespoon Olive Oil
  • Salt and Pepper
  • 3/4 cup Mozzarella Cheese
  • 1 cup Alfredo Sauce

Instructions

  1. Preheat the oven to 350 degrees. Boil the pasta shells according to package directions.
  2. In a skillet, brown the sausage until crispy and fully cooked. Drain the fat and add the olive oil and then kale. Add in the garlic and salt and pepper. Sauté for about 5 minutes.
  3. Stuff each shell with cheese, kale and sausage. Drizzle Alfredo sauce on top of the shells. Bake for 20 minutes. Enjoy!
