Our Italian Breakfast Bake is the perfect quick meal that all parents should try! It is simple, delicious, and every bite brings a new flavor to your pallet. The school year in Sacramento has officially started, and Allie’s first day with children was today. As I mentioned in a previous article, when she begins the school year, we notice a shift in the type of meals we cook. We tend to cook more time saving meals. The Italian Breakfast Bake keeps with the same dinner theme in our other simple and delicious post. Both meals are perfect for family dinners, especially when you are a busy parent buying school supplies.




Italian Breakfast Bake

Our inspiration comes from simplicity. We never want to sacrifice flavor when we cook these time consuming meals, so we try to think out of the box when it comes to the ingredients. Instead of having sliced salami topped over the dish, we decided to buy a fresh Columbus salami roll. For extra texture, we decided to chop it into cubes and mix it into our dish. Not only did it produce a salty treat, it provided a beautiful color we hoped for. Another ingredient we have wanted to cook with for some time was an orange tomato. We love cherry tomatoes, so to try its orange cousin was a treat. The taste the orange tomatoes produced when baked reminded us of a homemade pasta sauce! It was truly a pleasant surprise. This dish is also excellent for parents because it allows you to sneak in several different vegetables.

Growing up I never wanted to eat my vegetables, but for some reason, I never minded if they were blended with other foods. Call it strange, but my parents found something that worked and went with it. I share this because introducing this idea to parents whose children are picky will hopefully provide them with options. In this dish we successfully blended frozen spinach. Not only is this dish perfect for dinner, but also it is excellent for breakfast.




It is wonderful to be able to cook a meal that can be enjoyed at night or first thing in the morning. We love that this dish is perfect for anytime. Enjoy the Italian Breakfast Bake the following morning and you will not be disappointed! It was armed up and ready again for breakfast the following day. What a double treat!

Ingredients

  • 8 Eggs, Beaten
  • ¾ cup Half and Half
  • ½ Loaf of French Bread, cubed
  • ½ cup Frozen Spinach, chopped
  • ½ cup Cherry Tomatoes
  • 1 ½ cups Shredded Parmesan Cheese
  • ½ Cup Columbus Salami, chopped
  • Salt and Pepper

Instructions

  1. Preheat the oven to 350 degrees. In a small bowl, beat the eggs and set aside. Chop the French bread and salami and add them into a medium-sized baking dish. Cook the frozen spinach according to the instructions and then add it to the baking dish.
  2. Pour the eggs and half and half into the baking dish. Season with salt and pepper and top with tomatoes and cheese. Bake for thirty minutes. Enjoy!
