Sometimes an incredibly easy appetizer can be the best and most delicious dinner. Often, when Dan and I are busy, a tasty appetizer is all we have for dinner. While it may not be the healthiest choice, it is a fun change up to our normal meals. Sometimes, this easy change up is much needed to vary our everyday foods. In an effort to add something to our dinner plans, we made this amazing Italian Antipasto Melts. These amazing melts were so perfect, simple and delicious! After we devoured a few too many, we realized that they replace the typical antipasto tray that we customarily prepare or eat at homes of friends and family. In a matter of minutes, these tasty appetizers can be made and happily enjoyed.




 




 

Italian Antipasto Melts




Our idea for these melts came from our love for salami and cheese nights. Every once in a while, Dan and I will decide not to cook or eat out, and instead lay out Italian meats and tasty cheeses. While shopping in the grocery store, we will stop by the fancy cheese area and silently agree that a cheese and cracker night is much needed. We do this so often that we wanted to put a fresh and fun spin on this dinner tradition. After looking through our pantry, these fun and versatile Italian antipasto melts were born.

My favorite thing about these melts is that they could include a variety of ingredients. We happened to have roasted peppers, artichoke hearts, olives and salami on hand. However, these could have been just as amazing with olive tapenade, pesto and prosciutto. Utilizing traditional Italian ingredients and melting them on slices of bread made for a fun and cheesy treat. These would also be amazing appetizers that could be made in no time and then served to happy guests. We love how many elements could be changed, but the basic idea of cheesy, Italian toast could still be deliciously captured.

After gobbling up several of these Italian antipasto melts, we know we will be making them again. Whether they are for a gathering or just for the two of us, we cannot wait to switch up the ingredients and dig into these perfect melts. Italian Antipasto Melts

Italian Antipasto Melts

These Italian melts are perfect for a gathering or to pair with a great glass of wine!

Ingredients

  • 10-12 Slices of French Bread
  • 1 1/2 cups Mozzarella Cheese, shredded
  • 1/4 cup Sun Dried Tomatoes, chopped
  • 1/4 cup Roasted Red Peppers, sliced
  • 1 jar Marinated Artichoke Hearts
  • 10-12 Slices Genoa Salami
  • 4 Sprigs Basil, Chopped
  • Salt and Pepper

Instructions

  1. Preheat the oven and turn it to its broil settings. Place bread slices on a lined baking sheet and begin adding the ingredients evenly to the top. First add the cheese, followed by the sun dried tomatoes, peppers, artichoke hearts and salami.
  2. Broil the toasts for about 5 minutes, checking on them frequently. Remove when cheese is browned and bubbly. Top with basil, salt and pepper. Enjoy!
