Spring is officially here and we can definitely feel it in Sacramento. We have had some beautiful, bright and warm days here lately. This amazing weather has been inspiring our cooking so much this week. Whenever it starts to heat up, we eat more foods that are crisp and fresh. This goat cheese spring pasta skillet is so garden-fresh and has the best, creamy flavors. We loved how healthy it looked and tasted and how it simply shouted Spring.

Making this skillet was such a delicious and exciting experience. We loved how it looked and tasted just like spring. It is the perfect dish to experience the new, warm season. Featuring fresh, spring produce and creamy goat cheese, this meal was so incredible to devour. It would be the perfect dish to serve to guests for an outdoor dinner party. We loved making it on a weeknight and found it to be very fast and equally tasty. This effortless and delicious meal is the perfect spring treat any day of the week.

Goast Cheese Spring Pasta Skillet

Ingredients

  • 1 pound Spaghetti
  • 1 cup Broccoli, steamed
  • 1/2 cup Peas
  • 1/2 cup Goat Cheese
  • 1/2 cup Milk
  • Salt and Pepper
  • 1 cup Watercress, Chopped

Instructions

  1. Cook the spaghetti in a large pot of boiling water. After fully cooked, drain the water and transfer to a skillet.
  2. After the broccoli is steamed, add it and the peas the skillet. Pour in the milk and stir for three minutes. Add the goat cheese and stir until it is smooth and creamy or another three minutes. Season generously with salt and pepper. Top with fresh watercress. Enjoy!
