Yes, this is another grilled cheese post. We are pretty obsessed with grilled cheese around here, and this is an amazing spin on the classic sandwich. We love gnocchi and grilled cheese, and bringing them together was pure perfection! This gnocchi grilled cheese had the unexpected touch of pasta and it used a sun dried tomato pesto sauce, for a zesty and delicious twist. With all elements together, this melted sandwich was one or my favorite recipes we have made yet! Never before had I eaten anything like it, and all of the elements together worked so perfectly. When we took a bite, the textures, the flavors and the melted cheese were so incredibly amazing. This delicious treat is something that everyone should try!

With everything at our house slowly going into boxes, I am missing cooking each night. We have gotten so used to cooking daily, that eating out has already lost its luster. I miss making creations every day and cannot wait to cook again in our new kitchen. For now, we are bringing out old recipes and posting things we made months ago. When we can finally cook again, we will post delicious, summer recipes. My list of summer recipe ideas has gotten so out of control and I am so eager to finally try them all. Gnocchi Grilled Cheese

My favorite thing about this gnocchi grilled cheese is that it was so easy to make. When we dreamed up the recipe, it seemed like a complicated plan. However, as I easily executed each step, we realized how completely simple it really was. After the gnocchi was drained and the pesto was quickly made, this sandwich was so effortless to throw together.

Make this gnocchi grilled cheese to liven up a weeknight or weekend meal. Kids and adults alike will love this fun concoction. If you want to make the process even easier, you could also skip the pesto making and just buy a jar of sun dried tomato pesto. Gnocchi Grilled Cheese

Gnocchi Grilled Cheese

Ingredients

  • 12 Basil Leaves
  • ½ cup Sun dried Tomatoes
  • ¼ cup Pine Nuts
  • ¼ cup Olive Oil
  • ¼ cup Roma Tomato, diced
  • 1 teaspoon Garlic, minced
  • ¼ cup Parmesan Cheese, grated
  • ¼ teaspoon Pepper
  • 2 teaspoons Salt
  • 2 tablespoons Water
  • 1 package Gnocchi
  • 1 tablespoon Butter
  • 4 slices Texas Toast Bread
  • 4 slices Mozzarella Cheese
  • 2 slices Asiago Cheese
  • 4 slices Pancetta
  • 4 slices Roma Tomato

Instructions

  1. In a food processor, add 8 of the basil leaves, sundried tomatoes, pine nuts, olive oil, tomatoes, garlic, Parmesan cheese, pepper, salt and water. Pulse until fully blended, smooth, and finely chopped (about 3 minutes). Set aside.
  2. In a large pot, boil water and add gnocchi. Cook until the gnocchi rises to the top of the water. Drain and place gnocchi in a mixing bowl with the sundried tomato pesto. Mix until fully coated. Set aside.
  3. Melt butter in frying pan on medium heat. Place bread in pan and toast each side for 2-3 minutes. Remove two slices of the bread and set aside. On remaining slices of bread in the frying pan, place fresh mozzarella cheese and asiago cheese. Reduce heat to low and cover pan with lid. Remove bread when cheese is fully melted.
  4. In the same pan, fry pancetta for two minutes or until desired crispiness is achieved. Remove the bread from the pan and begin preparing the grilled cheese. On each sandwich, place ¼ cup of the gnocchi, 2 basil leaves, 2 slices of pancetta and 2 slices of tomato. Top the sandwiches with the other toasted slices of bread. Enjoy!
