Sometimes Dan and I get a little ambitious with our recipes. Instead of making a simple dish, we add a spin that makes it a bit more complicated. The goal of our blog is to make accessible and easy meals for readers. However, we sometimes add a recipe that pushes us. We love these recipes that we make every once in a while because they make us more confident in the kitchen. This of course is another main goal for our blog. While these recipes become a bit more complex, they are actually fairly simple for anyone who has beginning cooking skills. We love these recipes that make us more self-assured. Every single time, we walk away with full bellies thinking, that was so much easier than it initially seemed! We felt that exact same way with these chicken and waffle sandwiches.

When we first purchased all of our ingredients and put them on our butcher block at home, we were a little bit overwhelmed. Given that this has been one of our largest ingredient lists, we felt a bit nervous. However, when our ingredients began combining and the incredible aromas began to fill our kitchen, we were so happy with our food choice. All at once, some of our favorite foods came together in sandwich form. We knew that every ounce of our attempt at this chicken and waffle goodness was completely worth it. Not only was it so fun to make, but these chicken and waffle sandwiches were completely delicious.

The best part of eating chicken and waffles is the unexpected tastiness. Sweet combining with savory and soft combining with crunchy makes it such an amazing treat! We had so much fun creating these sandwiches and each delicious bite made it even more exciting. Add anything from avocados to mashed potatoes to these amazing sandwiches and you have an incredible treat on your hands! Enjoy them for breakfast, lunch or dinner, and get excited for this delicious challenge!

Chicken and Waffle Sandwiches

Ingredients

  • For the Waffles
  • 2 cups Flour
  • 3/4 cup Sugar
  • 3 teaspoons Baking Powder
  • 2 Eggs, separated
  • 1 1/2 cups Milk
  • 1 cup Butter
  • For the Hollandaise Sauce
  • 3 Egg Yolks
  • 1/2 Lemon, juiced
  • 1 teaspoon Water, cold
  • Salt and Pepper
  • 1/2 cup Butter
  • 1 teaspoon Cayenne Pepper
  • For the Chicken
  • 2-3 Chicken Breasts
  • 4 tablespoons Butter
  • 1 1/2 cups Flour
  • Salt and Pepper
  • Toppings
  • 1 Tomato, sliced
  • 1 cup Arugula
  • 6-8 slices of Bacon

Instructions

  1. To make the hollandaise sauce, whisk together egg yolks, lemon juice, cold water, salt and pepper and cayenne pepper in a medium bowl. Melt butter in a sauce pan and then gradually pour and whisk yolk mixture into butter. Continue whisking over low heat until the sauce is thickens, about 6 minutes.
  2. To make the waffles, add the flour, sugar and baking powder in a large mixing bowl. In a separate bowl, beat the egg yolks. Add milk and butter and mix. Stir into dry ingredients just until combined. Fold egg whites into batter. Bake in waffle iron until hardened and golden brown.
  3. To make the chicken, melt butter in a pyrex dish. Cut the chicken into strips. In a medium bowl, mix the flour and generous salt and pepper. Cover each chicken slice in the flour mixture and place in pyrex. Cook in oven at 375 degrees for 15 minutes. Flip the chicken and cook for another 15.
  4. Place the chicken along with the arugula, tomato and cooked bacon in between the waffles. Top with Hollandaise sauce. Enjoy!
