If you look at everything we make on our blog, I am pretty sure that we have more meatball recipes than anything else! Of course, pizza recipes are our second go-to, but anything meatball is something we cannot get enough of. We have made vegetarian meatballs, veggie and turkey meatballs, stuffed meatballs, barbecue meatballs and even tikka masala meatballs. This mouth watering food is always something that Dan and I turn to when we are completely stumped about what to make. Both of us go crazy for anything meatball, which is why our blog is definitely teeming with these tasty recipes. On a rainy day this month, Dan called from work while I was in the grocery store. I wanted something comforting and he wanted something hearty. While roaming near the chicken, Dan suggested (of course), meatballs! Without hesitation, I threw some ground chicken in the cart and went searching for the perfect marinara sauce to pair it with. With a goal to eat healthier this year, we definitely found a way to do this with these meatballs. Using chicken and not pairing this with noodles, made this meal lighter. With a side of our favorite roasted vegetable, broccoli, this dinner was something we did not mind having a second helping of.
Another beautiful thing about this chicken meatball skillet, is the amazing leftovers afterward. Given that there are just two of us, we each got to enjoy some meatballs the next day at work. We then paired our leftovers with some spaghetti noodles to give this meal a longer life. Having these meatballs two days in a row was so awesome! We we definitely excited to see that we could not eat this entire meatball skillet in one sitting. Sometimes, the second day is the real treat!
Make this chicken meatball skillet for a fast dinner that will satisfy your entire family! It would also be a fantastic dish to make for a potluck. With the big super bowl game coming up on Sunday, I am even thinking of making this again for our little gathering. Ingredients
- 1 lb. Ground Chicken
- 1/4 cup Breadcrumbs
- 1 Egg
- 1 tablespoon Garlic, crushed
- 1 tablespoon Worcestershire Sauce
- 1/2 cup Parmesan cheese
- Salt and Pepper
- 1 1/2 cups Tomato Sauce
- 4 Sprigs Fresh Basil, chopped
- 4 slices of Mozzarella Cheese, thinly sliced
- 1 tablespoon Dried Parsley
Instructions
- Preheat the oven to 350 degrees. In a large mixing bowl, add chicken, breadcrumbs, egg, garlic, worcestershire sauce, cheese and generous salt and pepper. Using your hands, mix the meatballs thoroughly and form into one-inch balls. Place in a greased, oven-safe skillet. About 10-12 meatballs can be formed.
- On medium heat, cook meatballs and turn every three minutes. Do this until all meatballs have been turned three times. Remove from heat and pour tomato sauce over the meatballs. Place the mozzarella slices on top of the meatballs and sauce. Place in oven for 10 minutes. Remove from oven and top with fresh basil and parsley. Enjoy!
