Dan and I met in college. For some reason, most of our college memories revolve around places in which amazing food was served. At Chico State, we had incredible food selections. There were a great variety of delicious and creative foods to choose from on a daily basis. Given that we were college students, I do not remember a whole lot of cooking going on by either of us. Therefore, we were regulars at some of the best restaurants around. One of our favorite places to get a quick dinner was Pita Pit. This place had so many topping choices, and the most delicious pitas were at our fingertips, the minute we started spouting off our orders. With fresh veggies, tasty meats and savory sauces, Pita Pit became a regular stop for the two of us after class. While these memories of places are great ones, we often crave these places that are so far away. Luckily, we easily fixed that problem by revamping and recreating our favorite order, the chicken caesar pita.
While reminiscing about college, Dan had the brilliant idea to make some of our favorite dishes from our old stomping grounds. With the shift from eating out every night to now cooking at home, we knew we could be inspired by some of our favorite college foods. This chicken caesar pita was so scrumptious that it had to be our first revamp on the blog. With rotisserie chicken, caesar dressing and bacon, this pita is seriously mouthwatering. More importantly, it took almost no time to make! We loved the healthiness of the pita combined with the amazing ease.
As we ate our pitas, we were blown away by the flavors. We knew this recipe was tasty, but eating it after so many years, surprised us. Everything in the pita works so well together, even though the ingredients are somewhat unexpected. Every bite and crunch made us miss our college days. However, we are now thankful for our newly discovered cooking skills. We love being able to crave something and recreate it with our own spin. It is so exciting to be inspired by something and make it in our own way. Best of all, we get to enjoy every last bite!
