Having stuffing in any way leading up to Thanksgiving is my favorite way of celebrating November. The minute November hits, I love making up ways to enjoy this delicious and savory bread concoction. Even though I have made it in so many different forms, I became so incredibly excited to pair it with cauliflower. Unsure of how it would taste after baking, we were completely thrilled by how amazing it came out. This cauliflower stuffing bake was everything we wanted in a stuffing dish and was a healthy and light weeknight dinner.
With savory stuffing and fresh cauliflower, this healthy and flavorful dish can be enjoyed as a side or as a main. It is especially perfect for Thanksgiving. When we created this idea, we had no idea how satisfying and savory it really would be. Dan was especially surprised with how he could picture himself eating it more frequently. Even though cauliflower was the main ingredient, it was still incredibly satisfying and the perfect ingredient to combine with my coveted stuffing.
Thanksgiving is easily my favorite holiday. It could be that my birthday falls around Thanksgiving, or the fact that comfort food is the most celebrated thing, but I look forward to this holiday every year. I love how eating all day is perfectly acceptable on this day. I also love how all of the dishes are saved up all year to just be enjoyed on one day. Dan and I obviously do not follow the rule of eating Thanksgiving foods only on Thanksgiving. We have had so much fun experimenting with Thanksgiving foods and eating stuffing in so many different ways. Since we do not host Thanksgiving, practicing and enjoying these foods before the big day is our way of making the holiday last longer. We also get to create our own menu that just the two of us get to enjoy each day leading up to Thanksgiving.

If you are looking for a fun, vegetarian bake and want to eat it on a random weeknight, this cauliflower bake is definitely calling your name. Whether you eat it on Thanksgiving or a Tuesday in October, we know that you will love how simple, tasty and fun this dish is.
Ingredients
- 4 cups Cauliflower Florets (from 1 Head of Cauliflower)
- Salt and Pepper
- 1 1/2 cups Chicken Stock
- 1 cup Parmesan Cheese, shredded
- 1 box Stuffing
- 1 1/2 cups Water
- 4 tablespoons Butter
- 1/4 cup Parsley, chopped
Instructions
- Preheat the oven to 400 degrees.
- In a baking dish, place the florets and season with salt and pepper. Pour in the chicken stock and place in the oven for 30 minutes.
- On the stovetop, place stuffing in a sauce pan and add water and butter. Bring mixture to a boil and then mix.
- Remove from the stuffing from the stove and place on top of cauliflower. Evenly spread Parmesan cheese over the stuffing and bake for 10 more minutes or until cheese is melted. Garnish with parsley. Enjoy!

Yum! Drained baked cauliflower, add cooked + drained hamburger meat, stirred into the cooked stuffing before spreading it on top of the baked cauliflower.
Had to sub a very light sprinkling of mozzarella (as we had no parmesan cheese on hand) and finished baking as directed.
Quite good! Picky husband was satisfied. Heck, I don’t like cauliflower….I made it for him and even I liked it!
