On a cold December day, coming home to make a bubbling, rich dish is a complete delight. We love making meals that warm us with incredible flavors and make us entirely satisfied. This caprese gnocchi with creamy pesto is one of those amazing dishes. After layering on the delicious sauce, cheese and ripe tomatoes, it became a decadent treat. When we dug into the cheesy pasta mixture, it steamed and simmered with levels of amazing flavors.

Even though he is Italian, Dan is not a fan of gnocchi. Over and over I have asked him why. His reasoning is always pretty ridiculous. After asking endlessly, I realized that he had never really had a gnocchi dish that was done well. As I finally understood this, I became even more determined to make a delicious and exciting meal featuring gnocchi. Knowing Dan’s favorite ingredients, it was pretty simple to construct this tasty meal. I knew it had to have great flavor, be filling, and be full of cheese. After discerning the main factors of the dish, I had fun dreaming up what else would be featured.

The first time I made gnocchi for Dan, I paired it with pesto and cheese. He ate it politely, but I could tell that he thought the pesto was too overpowering. This of course did not help my case for selling the deliciousness of gnocchi! However, this time around, I thought I would take a creamy approach and pair the pesto sauce with milk and cheese. As he tasted this sauce, I knew it would be a hit. The next step was to dress it with something that combines beautifully with pesto and cheese. I of course took the obvious approach and chose to dress it up with tomatoes. Add some spices and of course more cheese, and this caprese gnocchi is an incredible hit.

Make this fantastic gnocchi dish if you are craving something delicious and bubbly. It can be a great meal for two with fun leftovers, or can feed picky eaters. Caprese Gnocchi with Creamy Pesto

Ingredients

  • 2 packages Gnocchi
  • 1 cup Milk
  • 1/4 cup Water
  • 2 tablespoons Butter
  • 1/4 cup Pesto
  • 1 teaspoon Garlic Powder
  • Salt and Pepper
  • 1/2 cup Parmesan Cheese, shredded
  • 1/2 cup Cheddar Cheese, shredded
  • 2 Tomatoes, Sliced
  • 4-6 slices Mozzarella Cheese
  • 1/2 cup Basil Leaves
  • 1/4 cup Chopped Basil

Instructions

  1. Preheat oven to 375 degrees.
  2. Cook gnocchi according to package directions.
  3. Heat milk and water in a saucepan over medium heat for three minutes. Add butter, pesto sauce, garlic powder and salt. Reduce heat and continue to cook about 5 minutes. Stir in Parmesan cheese.
  4. Place gnocchi in a large baking dish and top with creamy pesto mixture. Stir in cheddar cheese. Top with tomatoes, mozzarella and basil. Cook for twenty minutes. Enjoy!
