Dan and I often make tostadas when we want a fast and satisfying meal. There are so many possibilities and so many tasty things that can top a tortilla. Whether we use traditional ingredients or become creative with more seasonal vegetables, we make and enjoy tostadas very frequently. This time as we created our go-to dinner, we wanted to celebrate the beginning of fall. Including fall fruits and vegetables when the weather gets cold, allows us to fully delight in our favorite season. When making the tostadas, we perused the grocery aisles to find the perfect fall staple. We chose butternut squash because it is the ideal fall vegetable. Adding this with avocados and black beans made for a combination that was both smooth and flavorful. Our butternut squash tostadas were so delicious and had us even more so enjoying fall.




Butternut Squash Tostadas

These tostadas were so simple to make. With the exception of the butternut squash, the ingredients were all leftover items in both our fridge and pantry. These everyday items paired so beautifully with the squash and made our favorite quick dinner even tastier. After roasting the squash, piling the tostadas with other toppings was extremely simple. Best of all, the combination bursts with incredible flavors that evoke the feelings of fall.




Butternut Squash Tostadas

One of our favorite things about the fall is the excitement that it brings to everyone. The warm clothes, the pumpkin patches and the piles of leaves are just some of the best things about this season. To us, the best part is of course the food. The possibilities and combinations that can come from both seasonal and comfort foods are endless. We did just that in this new dish. Uniting two unlikely ingredients, tostadas and butternut squash, made for such a fun dinner. Doing this was the essence of fall to us.




Butternut Squash Tostadas




As we spend more time inside due to the reducing temperatures, we have been becoming more adventurous in combining fall foods. As the days get colder, we hope to spend more time in our kitchen, making fun fall dishes. These butternut squash tostadas are the beginning of our delicious fall foods to come. When you make these, we hope that you get just as excited as we do, and enjoy every bite in this wonderful fall weather.




Butternut Squash Tostadas

Butternut Squash Tostadas

Ingredients

  • 1 cup Butternut Squash, cubed
  • Olive Oil
  • Salt and Pepper
  • 1 package Tostada Shells
  • 1 can Refried Black Beans
  • 1 cup Arugula
  • 1 Avocado, cubed
  • 1/4 cup Cilantro
  • 1/4 cup Feta Cheese
  • 1/2 cup Sour Cream
  • 1/4 cup Roasted Salsa

Instructions

  1. Preheat the oven to 375 degrees. Drizzle the butternut squash with olive oil, salt and pepper in a pyrex dish. Bake for 25 minutes or until browned.
  2. Warm the tostada shells in the oven for about three minutes. Top with black beans, avocado, cilantro and feta cheese. Before adding the arugula, coat the leaves thinly with oil, salt and pepper.
  3. To make the sauce, simply combine the salsa and sour cream in a mixing bowl. Drizzle over the tostadas. Enjoy!
