Okay. Here comes a pretty bold statement. This brussel sprout pesto is seriously one of the best things we have made. With very few ingredients, this sauce was one of the creamiest pestos I have ever tried. With a bold and fantastic flavor along with a smooth and silky texture, this pesto was so incredibly good.

When Dan came to me with this idea for Brussel sprout pesto, I was certain that it could not be done. The idea of turning brussel sprouts into a creamy sauce seemed pretty far fetched. Thankfully, I listened to Dan’s awesome idea and tried to make this pesto work. His idea was actually an amazing one! We love how it came together so quickly and needed very few things to make it so creamy and tasty.

Without nuts or milk, this brussel sprout pesto was somehow amazingly creamy and had a great, nutty flavor. We purchased almonds to go into the pesto, but after our first taste test, we knew that we could leave them out. As we devoured this pesto, we were so excited that it worked so beautifully. Both easy and delicious, this fantastic sauce was something we could make on a regular basis.

With Parmesan and crispy pancetta, this brussel sprout pesto pasta is the creamiest treat! This unexpected sauce is perfect for fall and will impress anyone who tries it. After making it the first time, I was determined to quickly make it again. In one week, I made it twice and bought it to my work’s fall potluck. After my colleagues tried it, I had so many people asking for the recipe. When I walked them through the simple steps, everyone was shocked and excited to make it themselves. Because it is so unique, the notion seems like it can not be done, but the wonderful flavors definitely prove otherwise.

If you decide to make this pesto, I am positive that it will not disappoint. Play around with the amount of parmesan and water you use to make it perfectly the consistency you like. We did this differently both times, and really experimented with our cheese and water ratio. Seasoning it generously with salt and pepper is also another way to make it even more delicious. We hope you try it and love it just as much as we do. It definitely is an incredible and unexpected meal that everyone will enjoy.

Ingredients

  • 2 1/2 cups Brussel Sprouts
  • 1/2 cup Parmesan Cheese
  • 3/4 cup Water
  • Salt and Pepper
  • 1/4 cup Pancetta, chopped
  • 1/4 cup Parsley, chopped
  • 1 pound Linguine

Instructions

  1. Steam the brussel sprouts so that they are fully cooked. In a food processor, while they are still hot, grind the brussel sprouts until they are smoothly chopped. Add in the cheese and mix thoroughly. Gradually pour in the water, a 1/4 cup at a time. Mix until fully blended. More water can be added to achieve the desired consistency. Season with salt and pepper.
  2. Crisp the pancetta on the stove top and cook the linguine according to package instructions.
  3. Pour the pesto over the linguine and garnish with parsley and pancetta. Enjoy!
