This recipe we made is probably one of our most simple recipes yet! Since we have completely packed away every last bit of our kitchen, our options for food have become completely limited. The charm of eating out every day for every meal became lost after a few days, so I had to start thinking very creatively. Without bowls, real plates and with only one knife, I had to think a bit out of the box for this delicious meal. Because it is one hundred percent thrown together, it is a true, no-cook recipe. Using pre-cooked, microwavable bacon instead of frying it, this meal can come together in a matter of minutes. Since they are so easy and packed with fun flavor, I am positive that these BLT avocados will be a quick-fix, no-cook hit!
When I first thought of these BLT avocados, I was feeling a bit ambitious. I wanted to make the chicken salad from scratch and fry up the bacon. However, when I peeked around my bare kitchen, I really did not have the time or the materials to do so. Therefore, this super simple and fast meal could easily become a summer favorite in many homes. Using already cooked and prepared bacon and chicken salad from the deli, this recipe is a real winner! I mean, who wants to be slaving away in the kitchen on a hot summer day, anyway? Ingredients
- 2 Large Avocados
- 1 cup Chicken Salad, from the Deli
- 2 Strips Bacon (we used already cooked bacon and simply microwaved it), chopped
- 1/4 cup Lettuce, shredded
- 1/4 cup Cherry Tomatoes, sliced
- 2 tablespoons Ranch Dressing
- Pepper
Instructions
- Cut the avocados in half and remove the pits. Evenly scoop the chicken salad into each avocado half.
- Microwave or cook the bacon and chop it. Top each avocado half with bacon, lettuce, tomatoes, ranch dressing and pepper. Enjoy!

Really dig this short cut you guys came up with. Nice to see I can make a healthish dish in a matter of minutes yet somehow incorporate bacon. All your recipes are great, but it’s refreshing to truly see a hack type recipe that can be done after a hard days work.
