We love experimenting with food that we have never cooked with before. Believe it or not, we have never cooked with apples. Sure, we have thrown them in a salad or put a sliced apple on top of a slice of cheese. However, neither of us had ever incorporated them into a prepared dish. When making this tart, I sadly even had to look up how to bake an apple! To my surprise, baking an apple is extremely easy! In fact, this entire meal was incredibly simple. As we dreamed up this dish, we thought of ingredients that would beautifully unite. When we thought of apples, goat and Brie cheeses immediately came to mind. Given that we love pancetta, this quickly became a main ingredient. Marrying each of these elements made for an amazingly delicious treat. We think that this baked apple tart would be a wonderful appetizer for a fall gathering, or a fun dinner paired with roasted vegetables. However it is devoured, we think it is a perfect meal for fall.

We try any way that we can to have fall fill our home. From decorative pumpkins to fresh pies in the oven, we try to savor this season in every way. Cooking with fall flavors has been a fun and welcomed challenge lately. Last fall, we were so busy that we hardly decorated or cooked any meal that incorporated seasonal foods. This time around, we are making up for this mistake by making numerous fall dishes and having our home explode with fall excitement. Since it is our favorite time of year, we have embraced it fully.

This baked apple tart is one of the easiest ways to celebrate fall. In minutes, the delicious aromas from the tart filled our home. We were able to enjoy this tart almost instantly and were so proud of this simple creation. We began this meal by baking the apples. After slicing them, we simply placed them in the oven and baked them for twenty minutes. After that, we melted our cheese, browned our pancetta and baked our pastry puff. Finally, we topped it with every ingredient and dug in! It does not get easier than that! One of our greatest finds with this dish was discovering goat Brie cheese. We did not know that this combination existed, and boy was it tasty! When you make this meal at home, be sure to be in the mood to celebrate fall. Whether it is eaten as an appetizer or as a main dish, it will be the perfect fall food!

Ingredients

  • 1 Apple, sliced
  • 1 package Puff Pastry
  • 1 package Pancetta, diced
  • 8 oz. Goat Brie Cheese
  • 1 tablespoon Olive Oil
  • 1/4 cup Parmesan Cheese, shaved
  • 6-8 sprigs Arugala

Instructions

  1. Preheat the oven to 350 degrees. Placed sliced apples in a small baking dish and bake for 25 minutes.
  2. Cut puff pastry into even squares. Take a fork and make indents in each of the edges. Bake according to package directions or for about 10-12 minutes.
  3. In a skillet, brown the pancetta for about 6-8 minutes. In a small saucepan, melt the goat brie cheese with the olive oil. When melted, spread the cheese evenly over the pastry squares. Layer on the apples and drizzle the pancetta over each square. Top the tarts with arugula and Parmesan cheese. Enjoy!
