Due to our blog’s namesake and our desire to try twists of our favorite meal, Dan and I have become so fast at making risotto. With each attempt at the delicious rice dish, it becomes even easier and even tastier. We love how versatile risotto is and how we can create the most uncommon combinations. When we add any scrumptious ingredient to this creamy rice, it becomes a more fun and flavorful dish. Every bite of this asparagus risotto was so cheesy and packed with deliciousness. Not only did we love the wonderful creaminess, but we also loved how beautifully the ingredients worked together.




Asparagus Risotto




Besides the amazing flavors, we absolutely loved how our asparagus risotto featured a fresh vegetable from our local farmers’ market. We have had so much fun shopping for local produce and making fresh, delicious meals with our finds. Walking the rows of incredible fruits and vegetables and creating a dish with these locally sourced foods has been so exciting. Along with consuming fresh and local ingredients, it has also been very satisfying to support local, organic farms. After consuming a meal filled with fresh vegetables, we feel so energized and so excited to come up with more veggie packed dinner ideas. Asparagus Risotto

Before making so much risotto, I would never have realized that it is actually an attainable and effortless dish. With all of our practice, we can now make risotto in under 20 minutes! We love how quickly we can pour the rice in and mix the flavorful aspects together. We also enjoy how we can pile almost anything on top of it to make it even more exciting and tasty. Whether it is lobster, pumpkin or avocado, we take pleasure in trying new flavors mixed into this versatile rice dish.




Asparagus Risotto

We are certain that after you try this asparagus risotto, you will want to make it again and again. The crispness of the asparagus paired with the salty pancetta was such an incredible combination. Mixed with cheese and rice, this dish was one of our favorite risottos yet! We cannot wait to bring you another risotto recipe next month. Asparagus Risotto




 

Asparagus and Pancetta Risotto

Asparagus and Pancetta Risotto

Ingredients

  • 1 tablespoon Butter
  • ¾ cup Arborio Rice
  • Salt and Pepper
  • Olive Oil
  • 1 medium white onion, chopped
  • ¼ cup Parmesan cheese
  • 2 tbs. minced garlic
  • ½ cup water
  • 1 ¾ cups chicken broth or vegetable broth
  • 8 Spears of Asparagus, chopped
  • 1/2 Pancetta

Instructions

  1. Place a medium sized saucepan on the stovetop and turn to medium heat. Pour the chicken broth and water in the medium sized saucepan, and cover. Bring to a boil and reduce heat.
  2. Put a medium size skillet on the stovetop and turn to medium heat. Pour a tablespoon of olive oil into the skillet, and then add the onions. Season with 1 tbs. garlic, salt and pepper. Let this sauté for about 3 minutes. Pour in the Arborio Rice and let it cook for about 2 minutes or until the rice begins to turn translucent.
  3. While the risotto is cooking, place asparagus in skillet with olive oil. Cook for ten minutes, rotating every few minutes. Remove from pan and chop.
  4. In the same pan, place the pancetta on medium heat. Cook until crispy.
  5. After risotto is finished cooking, stir for about 4 minutes with a wooden spoon until the liquid is almost gone. Garnish with asparagus, pancetta and more parmesan cheese. Enjoy!
