Every once in a while, Dan and I will put absolutely no planning into our meals and let our refrigerator leftovers do the work. We rummage through the fridge and pantry and decide what could combine well to create a delicious meal. That is exactly what happened when we made this apricot chicken skillet with prosciutto. Sometimes this process is not as successful as we hoped. However, for this chicken skillet, our thrown together ingredients were a tasty hit. Dan must have thought that I was crazy when I put arugula, left over chicken, apricot jam, prosciutto and feta cheese on our kitchen island. After about thirty minutes of experimenting, this delicious masterpiece appeared.

I have always wanted to try making apricot chicken but did not attempt it until this happy accident occurred. Adding a sweet aspect to a savory dish is always an unexpected treat. I loved how every bite was both sweet and savory and full of scrumptious flavors. With the touch of prosciutto and feta, even more saltiness was deliciously added. We loved how all of the elements blended beautifully to create an astonishing surprise.

Apricot Chicken Skillet

Prep Time: 5 minutes

Cook Time: 20 minutes

Yield: 4 Chicken Breasts

Serving Size: 2-4 servings

Apricot Chicken Skillet

This apricot chicken skillet with prosciutto is a healthy one-pan wonder that is both sweet and savory.

Ingredients

  • Olive Oil
  • 4 Boneless Skinless Chicken Breasts, lightly pounded
  • Salt and Pepper
  • 4 slices Prosciutto
  • 1 cups Reduced-Sodium Chicken Broth
  • 3/4 cup Apricot Preserves
  • ½ cup Feta Cheese
  • 1 cup Arugula

Instructions

  1. Heat oil in large skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add to skillet and cook 12 to 15 minutes or until no longer pink.
  2. Add prosciutto under the cooked chicken. Let it crisp on medium-low for 3-5 minutes.
  3. Stir together chicken broth and apricot preserves thoroughly. Slowly add to chicken in skillet. Cook 3 to 4 minutes or until sauce is thickened, stirring constantly.
  4. Top with feta cheese and arugula. Enjoy!
