Every once in a while, Dan and I will put absolutely no planning into our meals and let our refrigerator leftovers do the work. We rummage through the fridge and pantry and decide what could combine well to create a delicious meal. That is exactly what happened when we made this apricot chicken skillet with prosciutto. Sometimes this process is not as successful as we hoped. However, for this chicken skillet, our thrown together ingredients were a tasty hit. Dan must have thought that I was crazy when I put arugula, left over chicken, apricot jam, prosciutto and feta cheese on our kitchen island. After about thirty minutes of experimenting, this delicious masterpiece appeared.
