It has been so nice to finally cook again and use our new and beautiful kitchen! Unpacking and moving was so much more difficult for me because I had to eat out and not cook homemade meals. For a while, this habit was exciting, and then after a few days, the enthusiasm completely wore off. I quickly realized that I can only have so many fast food meals in a week before I start wanting to cook something healthy. When our home’s kitchen finally became useable, I went straight to the grocery store to make easy and fresh summer meals. I had been craving anything with vegetables and this zucchini sausage summer casserole hit the spot!




 




What I love best about this summer casserole is that it is fresh and healthy while also cutting some necessary corners. Using a box of seasoned herb stuffing made this recipe so completely effortless! It was so simple to throw ingredients into a baking dish, cook some sizzling sausage and arrange fresh zucchini on top. In minutes, this dish was ready to go, and the oven did all of the hard work for me. We usually do not like using our oven in the summer, but making a quick, baked casserole with summer ingredients was a delicious choice.




 




It has been so fun in our new home. Aside from two boxes and a few items we need to donate in our garage, we are finally unpacked! Since I have the summer off, I have been able to arrange and organize our home each day. It has been so exciting to show Dan my progress every evening when he comes home. He keeps telling me to kick my feet up and enjoy my time away from teaching, but I just love making our home perfectly ours. This zucchini sausage summer casserole is an easy go to for bringing fresh and delicious flavors effortlessly to the dinner table. Zucchini Sausage Summer Casserole

Zucchini Sausage Summer Casserole

Ingredients

  • 1 box Herb Stuffing Mix
  • 1 1/2 cups Chicken Broth
  • 1/2 cup Cream of Celery
  • 1/4 cup Water
  • 1 cup Parmesan Cheese, seperated
  • 1 lb. Pork Sausage (we used Jimmy Dean Sage Pork Sausage)
  • 1 large Zucchini
  • 1 large Yellow Squash
  • Olive Oil
  • 1/4 cup Basil, chopped

Instructions

  1. Preheat the oven to 375 degrees. In a large, oven safe dish, mix the stuffing mix, chicken broth, cream of celery, water and 1/2 of the Parmesan cheese. Mix thoroughly and set aside.
  2. In a frying pan, crisp the sausage until fully cooked. Drain the fat and stir the sausage into the stuffing mixture.
  3. Using a mandoline (or a knife), cut the zucchini and yellow squash into even slices. Arrange them on top of the stuffing mixture in any desired form. We chose an easy spiral shape, alternating the vegetables by color. Top with remaining cheese. Drizzle olive oil over the zucchini and bake in the oven for 45 minutes. When it is fully cooked, garnish the casserole with basil and serve. Enjoy!
