Some nights for dinner, we want to put all of our favorite foods together in one bowl. Since some of those favorite foods of ours are avocados, rice and zucchini, we did not know how our creation would exactly turn out. However, as we took a big bite of our zoodle rice bowl, we were in for quite a delicious treat!




Zoodle Rice Bowl




We always say that some of the best meals come from odd or made up creations. We love experimenting with food and love it even more when it completely works! This time, for this fantastic zoodle rice bowl, it totally did just that! The creamy avocado mixed with the rich sauce was absolutely perfect. On top of that, the steamed and flavorful zoodles combined with the tasty rice, made for a delicious treat. Throw in a simple rotisserie chicken and, BAM! A scrumptious dinner was done in no time!

We modeled this bowl after one of our favorite rice bowls that is made in the little college town where we met. Tea Bar in Chico, California was one of our favorite date spots before we were married. Each time we went, we were definite creatures of habit and had the exact same rice bowl with the exact same sauce. We loved that place so much that we often ate there multiple times a week. When we think back on our time in college together, we often reminisce about excellent meals we had with one another.

The meal we are always bringing up is Tea Bar and that incredible sauce that would drench our yummy rice bowls. After I learned how to recreate and perfect the sauce from our favorite date spot, I knew I had to feature it in more and more recipes. You can see it here in our last post of banh mi tacos. We figure that once a good sauce it found and created, you can never have too much of it!

Zoodle Rice Bowl




These zoodle rice bowls would be the perfect treat on any weeknight. As we ate these, Dan kept telling me how completely delicious they were. I on the other hand was way too busy stuffing my face with zoodles to comment on the amazing tastes. This would be a fun meal to make for friends. It would also be a great meal to make co-workers jealous of your beautiful lunch! We know that however you enjoy it, you will want to make that beyond amazing sauce again and again!




 

Zoodle Rice Bowl

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 2 Bowls

Zoodle Rice Bowl

Ingredients

  • 3 Zucchinis, spriralized
  • 2 Carrots, spiralized
  • 2 tablespoons Soy Sauce
  • 3 cups Rice, cooked
  • 1 Avocado, sliced
  • 1 1/2 cups Rotisserie Chicken
  • 1/4 cup Green Onions, chopped
  • 2 tablespoons Sesame Seeds
  • For the Sauce
  • 3 tablespoons Mayo
  • 1 1/2 teaspoons Soy Sauce
  • 1/2 teaspoon White Vinegar
  • 1/4 teaspoon Garlic, minced
  • 1/4 teaspoon Ginger, minced
  • 1/4 teaspoon Lemon Juice
  • 1/4 teaspoon Sugar

Instructions

  1. In a pan on the stovetop, heat the spiralized zoodles with the soy sauce. Cover and cook until soft, about 10 minutes.
  2. In a bowl, place rice, avocado, chicken, green onions and zoodles.
  3. For the sauce, mix the mayo, soy sauce, white vinegar, garlic, ginger, lemon and sugar.
  4. Pour sauce evenly over the bowls. Garnish with sesame seeds. Enjoy!
