We are at it again! Dan and I have kicked off this new year with dishes that are loaded with vegetables. In fast, this turkey zucchini meatball skillet is literally loaded with veggies! We are looking for ways this year to infuse our food with nutrients and fresh produce. I think we have done pretty well with our first few meals of the year. We are enjoying this new challenge and have loved trying to find ways to saturate our meals with vegetables and incredible flavor.
Although we love vegetables, we have found it difficult to highlight them in every dish that we prepare. In order to give ourselves an exciting challenge, we have decided to find ways to emphasize and infuse them into every bite. This turkey zucchini meatball skillet rose perfectly to the challenge. We love meatballs and in an effort to give them a healthy spin, we shredded a zucchini and added it to our tasty meatball mixture. Often, we make our meatballs with pork and beef. However, we wanted a really lean meat this time and went with turkey. The turkey paired with the zucchini was a beautiful combination, and made each bite so juicy and flavorful. Each meatball was so mouthwatering and had an amazing burst of fresh vegetables.
We cooked and devoured these meatballs in almost no time! It was incredible how quickly they came together! With very little effort, these meatballs were mixed, shaped, placed in the oven and then gobbled down. It was one of those meals that required very little attention after they were popped in the oven. Best of all, when they were done baking, all that was left was the addition of more cheese. These low maintenance meatballs were so fun and simple to make and had me surprised that they were packed with delicious zucchini!
With this new emphasis on vegetables and nutritious meals, stay tuned for more healthy and exciting dishes. We loved that these meatballs could be eaten alone or be placed on a roll to become a healthy meatball sub. It could even be topped on a bed of vegetable or whole whet noodles.
