It is pretty well known that I love Thanksgiving! I look forward to it every year and it is easily my favorite holiday. With a holiday that celebrates food and more food, how could anyone dislike it? Perhaps more than the actual holiday itself, I really also love the few days after Thanksgiving for one reason only: LEFTOVERS! Getting to eat Thanksgiving food again and again is probably my favorite thing right after the real day. Being able to savor those flavors all over again is something I seriously love. In order to celebrate that tradition of eating those foods again and to come up with an idea to make this process unique, we created a fun and tasty recipe. These Thanksgiving leftover bites are equally enjoyable and easy. With just a quick reheat in the oven, these fun stuffing cups with all the fixings can be ready to be devoured.




When we first thought of these stuffing bites, the idea was born out of my need to stretch the leftovers for a few days. I love having a Thanksgiving meal for many days before and after Thanksgiving, and I hate to limit it to just one day. Given that we have been making a lot of game day food for our football appetizer posts, we have had a lot of experience lately with making recipes bite sized. Recently, our muffin tins have become our best friends. Thinking of how to fit Thanksgiving into a muffin tin was how this recipe came to life.




The moment we started putting all of the pieces of the bites together, we realized how convenient these would be for holiday guests. Whether family is getting back on the road to head home, or out to shop for the best deals, these bites would be perfect to make, set out and watch disappear very quickly! Placing these on a countertop and watching them vanish would be pretty awesome. With just one bite, Thanksgiving is literally in your mouth. Guests will absolutely take a bite or two or three of these amazing things.




These Thanksgiving leftover bites are perfect for on the go guests, the day after the big celebration. With mashed potatoes and stuffing cups, your guests will be addicted! Thanksgiving Leftover Bites

Yield: Make 12 Bites

Thanksgiving Leftover Bites

Ingredients

  • 2 cups Leftover Stuffing
  • 2 Eggs
  • 1 cup Leftover Mashed Potatoes
  • 1/4 cup Cranberry Sauce
  • 1/4 cup Leftover Turkey or any Leftover Holiday Meat (we used sausage)
  • 2 tablespoons Parsley, chopped

Instructions

  1. Preheat the oven to 375 degrees. In a large bowl, mix the stuffing with the eggs.
  2. Using a greased cupcake tin, form the stuffing cups. Using your hands, make the stuffing reach all the way up each side of the tin cups, and indent the bottom using your thumb. The stuffing should resemble a cup, so that foods can be layered on inside of each one.
  3. Place in the oven for 15 minutes. Remove and let cool completely so that they can take the form of the tins.
  4. Reheat the potatoes and turkey in the oven or microwave. When the cups are cool, first place the potatoes and then top with turkey and cranberry sauce. Garnish with parsley. Enjoy!
