Dinners that ooze with cheese and burst with fun flavors are our favorite. On a weeknight after a long day of work, these exciting meals are even more fun to devour. When we made this tex mex chorizo macaroni, we did not know how absolutely fantastic it would taste. With one bite, we were amazed how all of the flavors mixed together so beautifully. Each taste was so rich, spicy and delicious. It was the perfect comfort food meal with a bonus hint of spice.

Whenever we make macaroni, we love adding a new twist to it. Macaroni is such a versatile dish that we make very frequently. Often we make it on a whim when we have no idea what else to cook. When we are trying to use leftover contents from our fridge and pantry, macaroni and cheese is always our go to. We always have leftover milk and cheese and a box of pasta waiting to be made into this cheesy and extraordinary treat. Adding fun ingredients to our macaroni is always a happy accident. Sometimes hash browns are crisped on top, other times cauliflower is added to make it healthier. This time, we had a can of kidney beans, leftover tomatoes and cilantro, and some chorizo waiting to be used in this cheesy masterpiece.

If we could have macaroni and cheese every night, I would be extremely happy. Turning this dish into a spicier version somehow made macaroni even more exciting. Who knew that two little ingredients could make something so wonderful even more appealing? This tex mex chorizo macaroni is so simple and took no time to make. After the pasta was cooked and the sauce was complete, it was simply scooped into a big bowl. Once all of the flavors were perfectly blended, it was freshly garnished and quickly devoured!

Tex Mex Chorizo Macaroni

Ingredients

  • 1 pound Shell Pasta
  • 3 cups Milk
  • 1/2 cup Butter
  • 1/2 cup Flour
  • 2 teaspoons Salt
  • 1 1/2 cups Cheddar Cheese, grated
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Taco Seasoning
  • Salt and Pepper
  • 8 oz. Pork Chorizo
  • 1/2 cup Kidney Beans, drained and rinsed
  • 1 Tomato, chopped
  • 1/4 cup Cilantro, chopped

Instructions

  1. Boil water in a large pot and add elbow pasta. In a medium-sized pot, heat milk until it starts to bubble and then reduce the heat. In a separate pot, add the butter. When melted, slowly whisk in the flour. Whisk continuously for about 3 minutes. Add the milk slowly into the flour mixture and whisk continuously. Whisk mixture for another 3 minutes.
  2. Combine cheeses, taco seasoning and salt and pepper to the mixture and stir. Add the cooked pasta and stir for 5 minutes.
  3. In a skillet, heat the chorizo until fully cooked. Add to the macaroni. Garnish the macaroni with kidney beans, tomato and cilantro. Enjoy!
