Sweet Potato Thai Noodles

Ingredients

  • 1 package Soba Noodles
  • 1 Sweet Potato, spiralized
  • 1 cup chopped Broccoli
  • 1/2 cup Carrots, sliced
  • 1/2 Onion, diced
  • 1 tablespoon Olive Oil
  • 1 1/2 cups Rotisserie Chicken
  • Salt and Pepper
  • 2 tablespoons Ginger, minced
  • 1 tablespoon Garlic, minced
  • 2 tablespoons Thai Red Curry Paste
  • 1 14 oz. can Coconut Milk
  • 1 tablespoon Brown Sugar
  • 1/4 cup Pomegranate Seeds
  • 1 Lime
  • 1/4 cup Cilantro

Instructions

  1. Boil soba noodles according to package instructions.
  2. In a large skillet on medium heat, add the olive oil and add in the sweet potato spirals, broccoli, carrots and onion. Cook until vegetables are soft and cooked, about 5 minutes. Add in the rotisserie chickened stir. Season with salt and pepper.
  3. In the same skillet, stir in the ginger, garlic and Thai red curry paste. Pour in the coconut milk and mix thoroughly. Add in the brown sugar and stir in the soba noodles. Cook for five minutes on medium low heat. Garnish with pomegranate seeds, cilantro and lime. Enjoy!
