My dad is a farmer. This is something that has positively impacted my life and has given me an appreciation as I cook each day. While I have never experienced the intense exertion that goes into managing and maintaining a farm, I have seen first hand how hard he works. In the eyes of a young farmer’s daughter, I knew my dad was tired when he fell asleep before we did. I knew he worked hard when he would leave the dinner table almost every night to turn off pumps. I knew he was dedicated when he would come straight to my performances or games in muddy clothes. Throughout the years, I have profoundly grown a deep appreciation for what he and other farmers do for us everyday. I think a lot of us have walked through a grocery store and have given little to no thought about how the products got there. I am definitely guilty of that. Sometimes I will put something in my cart that I know he has grown. Suddenly, I feel both proud and grateful for his incredible and hard work.

This realization occurred recently as I grabbed a can of garbanzo beans. As I put it in my cart, I was struck with the thought that these could be some of the beans he worked so hard to grow this past year. This simple awareness then made me look down at the rest of my cart and think about the dedication and efforts of other farmers that went into my other items. This realization is something that I sadly take for granted, and is so vital to my health and existence.




Sun-Dried Tomato Hummus

As an appreciation of my father’s incredible work each day, I decided to make something delicious and beautiful with that can of garbanzo beans. It sounds silly, but showcasing and enjoying something he worked so diligently to produce, was very fulfilling. This sun-dried tomato hummus with feta was completely delicious. I mean, stop what you are doing and devour the entire bowl, delicious. Every bite was both savory and earthy. It was so perfectly filling and actually gave me energy. I was so amazed by the flavors and also by the amazing simplicity. After 5 minutes of measuring and taste testing, I had some delicious hummus on the table. It fed two hungry men and myself and would be perfect for an appetizer before dinner. I would highly recommend trying this as soon as you can get to the store! Hopefully as you shop for the items, you will think about those who work hard to feed us everyday. I know it is a great reminder that so many hard working farmers would appreciate!

Sun-Dried Tomato and Feta Hummus

Sun-Dried Tomato and Feta Hummus

Ingredients

  • 1 can Garbanzo Beans
  • 3/4 - 1 cup Olive Oil
  • 1/2 cup Sun-Dried Tomato Spread
  • 1/4 cup Feta Cheese
  • 1 tablespoon Crushed Red Pepper Flakes

Instructions

  1. In a small food processor, add the can of garbanzo beans and half of the oil and mix until smooth. More oil can be added if the mixture seems too thick. Add in the sun-dried tomato spread and blend it in the processor. More oil can slowly be added if it appears to be thick or paste-like. When smooth, pulse in the feta cheese. Serve with more oil on top and crushed red pepper flakes. Enjoy!
