We have taken a week off from blogging to move into and unpack our new home! We are officially homeowners now and we absolutely love this new journey. Every aspect of making our home our own has been such a fun and rewarding experience. Every night that we sit on our couch ever since we moved in last week, we have to remind ourselves that this place is actually ours. Currently, we are unpacking, arranging and rearranging all of our things. However, when we are finished, we hope to give you a sneak peek of our sweet house. We love this decorating process and putting our stamp on every room. Until then, we will be showing you delicious recipes that have been giving us fuel to finish this wild and exhausting process. For those of you who are experiencing a busy and jammed packed summer like us, here is a simple recipe that can keep you sustained and satisfied. We love how this bake incorporated some of our favorite summer ingredients while also being hearty and delicious. Every bite of this summer penne pasta bake was filled with amazing flavors that caused us to keep scooping more and more. Since it was packed with vegetables, we felt less guilty about every yummy scoop.

This summer penne pasta bake can be adapted to incorporate any favorite vegetable. It is as easy as throwing in leftover or frozen veggies onto a bed of penne and zesty marinara sauce. The real key is to top it with an amazing combination of fresh basil, cherry tomatoes, breadcrumbs and crispy pancetta. With this mixture, we are positive that you will have many hands reaching for more and more perfect scoops of veggies and pasta.

Although we had plans this summer to showcase more grill ideas, this summer move threw a happy wrench into our intentions. Although we hope to settle in enough to share some easy grill ideas, our next few recipes will definitely be summer spins on easy ‘unpacking food’. These meals will also be really helpful for families going back to school soon. Unfortunately, my summer break is just starting and it will also be finishing in a blink of an eye. However, I will be ready to make this fantastic pasta bake in a few weeks when I am back at it with the kids again. We hope you enjoy this simple recipe and that you find it both easy and fun.

Summer Penne Pasta Bake

Ingredients

  • 1 box Penne Pasta
  • 1 cup Marinara Sauce
  • 1/4 cup Broccoli, chopped (we used frozen broccoli)
  • 1/4 cup Corn
  • 1 cup Mozzarella Cheese, shredded
  • 1/4 cup Bread Crumbs
  • 1/4 cup Cherry Tomatoes, halved
  • 1/4 cup Basil, chopped
  • 6 slices Pancetta
  • 1/4 cup Parmesan Cheese

Instructions

  1. Preheat the oven to 375 degrees. In a large pot, boil the pasta. When it is cooked to al dente, drain the penne and place it in a medium baking dish. Stir in the marinara sauce, broccoli, corn and all but a 1/4 cup of the mozzarella cheese. Mix until all of the pasta is fully coated with sauce. Top the dish with the remaining mozzarella cheese and bread crumbs. Place in the oven for 20 minutes.
  2. While the pasta is baking, crisp up the pancetta on the stove top for about five minutes. When the pasta bake is finished cooking and the cheese is fully melted, top it with cherry tomatoes, basil, pancetta and Parmesan cheese. Serve and enjoy!
