Summer Garden Pesto Quiche

Summer Garden Pesto Quiche

Ingredients

  • 1 Refrigerated Pie Crust
  • 1 cup milk
  • 4 eggs, slightly beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup Monterey Jack Cheese, shredded
  • 1/4 cup Parmesan Cheese, grated
  • 1/4 cup Pesto
  • 1 Zucchini, thinly sliced
  • 1 Tomato, chopped
  • 2 tablespoons Basil, finely chopped

Instructions

  1. Heat oven to 350 degrees. Place pie crust in a pie plate.
  2. In medium bowl, mix milk, eggs, salt and pepper and set the bowl aside. In the pie crust, layer the cheeses and evenly spoon in the pesto. Pour egg mixture over top. On top of the quiche, layer the zucchini slices and tomatoes.
  3. Bake 40 to 50 minutes or until knife inserted in center comes out clean. Garnish with fresh basil. Let stand 5 minutes and serve. Enjoy!
