It has been a while since we have posted a recipe on here and we have a few great excuses! The first and biggest excuse is that we bought a house! We are so excited and cannot wait until it is officially official! This new adventure of being homeowners is something we are so thrilled to experience. One thing that we are mostly looking forward to is giving our new home our personal touch. Even though this is a food blog, we plan on featuring our DIY projects on here as soon as we get brave enough to tackle each one. Once we are all moved in and summer school is over, I know that I will be so eager to start making our place our home. We will definitely be documenting our whole home owning and decorating experiences on here. Until then, feast your eyes on this gorgeous and super simple summer chicken parmesan dish.

When we first found out that we got the house, the chaotic whirlwind of signing documents, going to inspections and organizing paperwork ensued. Because of this, we needed to cook meals that were both incredibly simple and incredibly fast for summer. Our next few meals are so fast, easy and foolproof to enjoy in this super warm weather. This one especially should become a summer staple in every home. With fresh, seasonal ingredients on top of a perfectly breaded chicken breast, this dish is something that everyone should enjoy in this wild heat.

What I love most about this summer chicken parmesan, is how it is a seasonal spin on one of Dan’s favorite meals. If Dan could eat chicken parm (as he calls it) everyday, he would be the happiest! He has had it in so many different forms, but not yet with fresh, summery ingredients on top. One of my favorite ways that he has enjoyed it is with French fries. When he visited his brother in Australia, they ate it on top of a bed of fries almost every night at a local restaurant. Every once in a while, we prepare it this way for a guilty pleasure treat. Because it is so hot here in Sacramento, French fries sounded heavy and not too desirable. With tomatoes, avocados and fresh corn, this version of chicken parm was irresistible!

This summer chicken parmesan is an amazing and fresh spin on the classic dish. With beautiful, summer ingredients, this chicken parmesan is the perfect dish to enjoy on a hot night. We know that if you make it, you will whip it up all summer long!

Summer Chicken Parmesan

Ingredients

  • 4-6 Chicken Breasts
  • 1 cup Buttermilk
  • 1 1/2 cups Breadcrumbs
  • 2 teaspoons Salt
  • 2 teaspoons Pepper
  • 4-6 slices Mozzarella
  • 1 cup Vodka Pasta Sauce
  • 1 Avocado, cubed
  • 1/2 cup Grilled Corn
  • 1/2 cup Cherry Tomatoes, sliced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Balsalmic Vinegar
  • 2 teaspoons Dried Basil

Instructions

  1. Preheat the oven to 375 degrees. Clean and prepare the chicken breasts and set aside on a cutting board.
  2. In one mixing bowl, add the buttermilk. In a separate bowl, add the breadcrumbs, salt and pepper. Mix thoroughly. One at a time, coat the chicken in the buttermilk and then in the breadcrumbs. When coated, place on a greased baking sheet. When all of the chicken is prepared and coated, place in the oven for 30 minutes. After 30 minutes, pull the chicken out and top each one with a slice of mozzarella. Cook for another 10 minutes so that cheese is fully melted.
  3. When the chicken is fully cooked, pour some vodka sauce evenly on top of each chicken breast.
  4. In a mixing bowl, place avocado, grilled corn, cherry tomatoes, olive oil and balsamic vinegar. Mix and place on top of each chicken breast. Garnish with dried basil. Enjoy!
