Given that Dan and I are both pretty busy at work, making a breakfast for the week is a must. With school starting this past week, I was determined to create something that I could quickly enjoy each morning. Trying to get back into a hectic routine requires something becoming simplified. Because I have been used to having long mornings at home without any rush, simplifying breakfast has been key. When we made this strawberry chocolate chip bread for the week, we knew it would be completely delicious. However, after having it each day before work, we came to realize that this bread is also convenient and incredibly satisfying.

It is well known that I am pretty bad at baking. I should one day do a post purely about my many baking disasters. The amount of baking failures I have made is almost endless! Somehow, even if I use a box to bake, my dessert is still a huge (and usually inedible) mess. When I took on this bread, I was very worried that it would join my wall of shame. Every time I try to make something sweet, there is a huge possibility that a failure is going to emerge from the oven. To my surprise, this strawberry chocolate chip bread came out perfectly! Dan even commented about how proud he was of me for making a successful baked bread. We were both happily astonished by how great it really was! It was so wonderful that it was a treat to enjoy again and again each morning.

Strawberry Chocolate Chip Bread

Ingredients

  • 3 cups Flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon Salt
  • 1 1/2 cups Sugar
  • 1 1/4 cups Canola Oil
  • 4 eggs
  • 2 cups Strawberries, chopped
  • 1/2 cup Chocolate Chips
  • 1/4 cup Granola

Instructions

  1. Heat oven to 350 degrees. Grease 2 loaf pans and set aside.
  2. In a medium bowl, whisk flour, baking powder, cinnamon, and salt. In another mixing bowl, whisk sugar, oil, and eggs. Combine the wet ingredients with the dry ingredients and whisk until thoroughly combined. Add the strawberries and chocolate chips. Pour the batter evenly into both pans.
  3. Bake for 1 hour until golden brown. Place a toothpick into the middle of the loaves to check if it is fully baked. Garnish with granola. Slice, serve and enjoy!
