There is something about spring that makes me want to eat the freshest and prettiest foods. When I walk through the grocery store or through a farmers’ market during this season, I become energized by all of the beautiful, fresh produce that is readily available. As I take in the vibrant colors and crisp fruits and vegetables, my mind starts to spin with creative meal ideas. With all of them revolving around fresh, spring vegetables, these ideas spin wildly when I see all of the gorgeous offerings of spring. When we recently perused our local farmers’ market, a glimpse of these vivid radishes made me quickly dream up a tasty recipe. The minute my eye caught these beauties, I knew I wanted to somehow incorporate them into a meal. With this desire, this spring radish quiche was deliciously born.

What I love best about this quiche is that it completely embodies spring to me. With the crisp, sliced radishes and the freshly chopped parsley, this savory pie was so rewarding to devour. Every bite was the perfect slice of spring and it made us appreciate this fantastic season even more.

Another favorite aspect of this spring radish quiche is its use of this fun vegetable. We have never used radishes as a main ingredient and it was so exciting to display them on this beautiful quiche. We loved how the radishes gave the quiche an incredible texture. Each crunch paired perfectly with the sharp cheese tastes. As we consumed the entire quiche, it made us so eager to use more spring flavors in our upcoming recipes. We have had so much fun purchasing locally sourced food from our farmers’ markets. It has been a wonderful journey to explore what is in season and how to prepare it in a tasty and inventive way. Spring Radish Quiche




Make this spring radish quiche for an easy weeknight meal to celebrate spring, or for a brunch with friends. This quiche would also be a perfect addition to Easter brunch. However you enjoy it, we hope that it helps you to appreciate this fresh, and incredible season. We know that when you dig in, you will get just as happily overwhelmed by the crisp flavors as we did.

Spring Radish Quiche

Ingredients

  • 4 Eggs, lightly beaten
  • 1 1/2 cups Sharp Cheddar Cheese
  • 1 cup Feta Cheese
  • 1 cup milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 4 Radishes, thinly sliced
  • 1 Frozen Pie Crust
  • 1/4 cup Parsley, chopped

Instructions

  1. Preheat oven to 375 degrees.
  2. In a mixing bowl, place beaten eggs, cheeses, milk, salt and pepper. Mix thoroughly. Pour into pie crust and place three-quarters of the radishes on top.
  3. Bake in oven for 40 minutes. When finished, place knife in center and check to see if it fully cooked.
  4. Garnish quiche with remaining radishes and parsley. Enjoy!
