Sometimes the best kind of dinner is a ‘throw together’ dinner. I give bonus points for a ‘throw together’ meal that is also healthy. Often, quicker is not always healthier. However, when cauliflower, carrots and spinach are the main, thrown in ingredients, it is a perfect meal. These spinach Alfredo pasta shells were so amazingly simple and were packed with so many delicious flavors. From the fresh sage to the crispy sausage, this dish is such a great fall staple.
Making food in the fall is such a welcomed treat after creating so many oven-free dinners. Don’t get me wrong – not needing to use the stove in 100 degree weather is incredibly nice. However, using the oven and filling our home with amazing aromas is also so wonderful. We love filling our cart with things like sage, butternut squash, apples and figs. It is such a change from the summer staples of tomatoes, corn and melons. When these flavors are baked in our oven, then the most fantastic smells envelope our home. With fall setting in soon and the amazing possibility of flavors being endless, we cannot wait to cook this season.
The best part of this dish is how simple it is. Throwing tasty ingredients into a baking dish is such a treat after a long day. When we are able to do this in a matter of minutes, it makes our meal even tastier. Dan works long hours and I am pretty exhausted after chasing after little kiddos all day long. Throwing ingredients into a dish and getting a masterpiece is a very great gift. Filling ourselves with delicious nutrients is so much better than filling ourselves with quick fast food. We absolutely love being able to know how to make a healthy and fast meal on a whim and are always searching how to do this more often.
