Just as promised, here are those delicious spicy mango enchiladas that we said we would share soon! Using the same sauce as our tasty spicy mango coconut shrimp bowls, this sauce was so simple and so flavorful. The minute we put it on our shrimp, the notion to utilize it in enchiladas sounded like a great plan. Once we began the process of making the enchiladas, I knew that the flavors of the cheese, corn tortillas and fresh mangos would be a different and delicious combination. As I took my first bite, it was obvious that these mango enchiladas were perfectly packed with incredible flavors.

 

Easily, my favorite aspect of this meal is that it is so amazingly fast to make. The preparation is so minimal and the oven does most of the work. Given that I am going back to work this week, my mind has been in shortcut mode. Without truly knowing it, I have been planning meals that take almost no time to make and that are perfect for busy school nights. With the back to school season right around the corner, this meal is an amazing addition to your everyday recipes. The greatest twist to this recipe is that it uses unexpected flavors in a classic dish, and it still feels so right.

Spicy Mango Cheese Enchiladas

Spicy Mango Cheese Enchiladas

Ingredients

  • For the Enchiladas
  • 8-10 Small Corn Tortillas
  • 1 3/4 cups Mozzarella Cheese
  • 3/4 cup Tomatillo Enchilada Sauce
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Chives, chopped
  • 1/2 Mango, chopped
  • 1/2 cup Sour Cream
  • 1/2 packet Guacamole Mix
  • For the Sauce
  • 1 Mango, chopped
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Red Onion, chopped
  • 1 1/2 teaspoons Sriracha
  • 3 tablespoons Coconut Milk

Instructions

  1. For the Enchiladas
  2. Preheat the oven to 375 degrees. In a baking dish, start assembling the enchiladas. Fill each tortilla with an even amount of Mozzarella cheese and a spoonful of tomatillo enchilada sauce. Once all of the tortillas are rolled, top the enchiladas with remaining cheese and tomatillo sauce. Garnish with cilantro, chives and mango and bake in the oven for 20 minutes.
  3. While the enchiladas are baking, mix the sour cream and the guacamole mix together. When the cheese is melted and bubbly, garnish with the sour cream mixture and the spicy mango sauce.
  4. For the Sauce
  5. In a food processor, add the mango, cilantro, red onion, sriracha and coconut milk. Blend until smooth. Add more coconut milk depending on preferred consistency.
